Annie’s Cucumber Salad

Cucumber Salad

Once again, here is another childhood favorite of mine. Every time we would visit my mom’s next-door neighbor growing up, Annie; she would  make this for me. Annie would have to stop me from eating the entire bowl of cucumber salad! I absolutely loved this growing up and still love it as much to this day. Unfortunately, Annie, never wrote down the recipe, and since she is no longer around I’ve had to make this dish by trial and error! I’ve pretty nailed this recipe spot on! The best part is that it’s super easy and very satisfying.

Annie’s Cucumber Salad

Prep Time: 30 minutes

Total Time: 60 minutes

Yield: 6


  • 2 med. cucumbers, peeled and sliced thin
  • 1 tbsp salt (before salad is made)
  • 1 (8 oz.) container of fat free sour cream
  • 1 tbsp diced fresh dill weed
  • 2 tbsp minced red onion
  • salt & pepper to taste


  1. Peel cucumbers and slice thin. Spread slices in large shallow pan. Sprinkle with salt and let stand 15 minutes; drain and rinse well.
  2. Combine remaining ingredients in medium bowl; mix well. Add cucumber slices; mix well. Let chill in refrigerator a few hours before serving.
