Sesame Chicken Skewers

Once again another great recipe from Ladies Home Journal; “50 Great Budget Dinners“. This made me feel like we were eating take out, and yet I made them! Super easy and great for entertaining! Best part is that you can let the chicken marinade the night before (along with the skewers in water), and then thread the chicken onto the skewers the next day. The Sweet Chili Sauce ultimately is what makes the chicken awesome… remember my post a few days ago about Mae Ploy? Have you bought some yet… if not, “what are you waiting for”?


Prep:  10 minutes
Cook: 10-15 minutes 

Serves: 4


Ingredients:

  • 1lb boneless skinless chicken strips
  • 1/4 cup lime juice & zest
  • fish sauce *splash
  • 1 tbsp garlic, minced
  • 1 tsp ground coriander
  • 1 tsp sesame oil


Directions:

1. The night before, marinate chicken by combining the lime juice and zest, a splash of fish sauce, minced garlic, ground coriander and sesame oil in a zip lock bag or container. *If your using bamboo skewers make sure you start soaking the skewers in water at least 30 minutes prior to grilling to allow them to not burn when grilled.

2. The next day; thread chicken onto skewers. 
3. Pre-heat grill and cook until internal temperature of chicken reads 165 degrees Fahrenheit (about 10-15 minutes depending on the thickness of your skewers). Serve hot or cold!
Side suggestions:  white/brown rice, Asian style green beans, and Mae Ploy!

  2. This is a great recipe; however, don't over cook the chicken! ;) This goes great with the sweet chili sauce! I hope you'll try it out!
