Tuna Salad with Sushi Flavors on Sesame Rice Crackers
Posted by Katie on Jan 18, 2011 in Appetizer, Seafood | 2 commentsI grew up loving tuna salad, so when I saw this revamped tuna salad recipe in Pam Anderson’s Perfect One-Dish Dinners {you know the cookbook that I blogged about last month & gave a copy away} I was instantly intrigued! I hosted dinner for my in-laws and dad a week or two before Christmas and of course I instantly went to Pam’s amazing new cookbook! I’m not going to lie I was a tad hesitant to serve this appetizer (although I knew that everyone loved tuna salad). I even made a few without the pickled ginger, since my husband never eats it when we go out for sushi. He actually enjoyed the cracker better with the pickled ginger on the cracker then without! Everyone loved these crackers, and because there was only 5 of us I made only half the recipe (I could have easily made the full batch as listed below). If you are having any sort of Asian inspired dinner party–you must make these super easy crackers! Best part is that you can make the tuna salad prior to the party; let it chill in the refrigerator then plate them up quickly. *I did have difficulty finding sesame rice crackers. I could only find whole grain sesame crackers!
Prep: 10 minutes
Serves: 24 individual appetizers
Ingredients:
2 cans (6oz each) tuna packed in water, drained and mashed to a paste
2 medium scallions, thinly sliced
1/2 cup mayonnaise (light or regular)
3-4 tsp wasabi paste (Japanese horseradish)
24 sesame rice crackers, preferably black sesame (OR whole wheat crackers)
24 slices pickled ginger
Directions:
1. Mix tuna, scallions, mayonnaise, and wasabi in a small bowl.
2. Place a slice of pickled ginger on the bottom of the cracker follower by a heaping teaspoonful of tuna.
3. Serve immediately and enjoy!
