T-minus 6 days until the “big game”. What are you making? If your entertaining I hope you;ll be utilizing your best friend… aka the slow cooker! I’ve been cooking with one for years and on average I try to make one slow cooker meal a week. It always ensures that when I get home from a busy day at the office that I’ll have dinner on the table in no time! Once a month, I make my favorite Crock Pot Jambalaya recipe, my chicken and black beans, and on occassion I’ll make my chicken and corn soup. I officially can say that this Slow Cooker Spicy Italian Sausage Subs with Fire-Roasted Tomato Sauce will also be making into my monthly crock pot rotation.

So let’s just talk about this KitchenAid® 6-Quart Slow Cooker with Easy Serve Lid with 4 temperature settings. I instantly fell in love with this slow cooker from the first time I pushed the “on” button.  I love the hinged glass lide, and the fact that the slow cooker pot itself is oval. My last crock pot was round and made it awkward to fit specific cuts of meat in it. Of course the ceramic vessel is easy-to-clean, as well! This is one quart larger than my last crock pot, as well so that is an even nicer perk. Oh, and did I mention that the stainless steel matches the rest of my appliances. Coincidence!

{Video} Slow Cooker Spicy Italian Sausage Subs with Fire-Roasted Tomato Sauce

Prep Time: 30 minutes

Cook Time: 3 hours, 30 minutes

Total Time: 4 hours

{Video} Slow Cooker Spicy Italian Sausage Subs with Fire-Roasted Tomato Sauce

Ingredients

  • 1 (28oz) can of Fire-Roasted Crushed Tomatoes
  • 1 (14.5oz) can of Fire-Roasted Diced Tomatoes
  • 1 onion, diced
  • 5 cloves garlic
  • 1/4 cup fresh chopped parsley
  • 1 tsp Italian Seasoning
  • 6 Hot Italian Sausages
  • 6 Sub Rolls
  • 6 slices of provolone cheese
  • 4 roasted red bell peppers, sliced
  • caramelized onions

Directions

  1. In a KitchenAid® 6-Quart Slow Cooker with Easy Serve Lid with 4 temperature settings add crushed and diced fire-roasted tomatoes to vessel. Then add diced onions, garlic, chopped parsley, and Italian seasoning. Stir well, then place hot Italian Sausages in vessel. Make sure each sausage is covered with sauce. Cook on high for 3.5 hours or low 7-8 hours.
  2. During the last 30 minutes of cooking, begin prepping your sub toppings: caramelizing onions (thinly slice onions and cook with butter/olive oil on medium-low for 15-20 minutes) and roasting red bell peppers.
  3. Once the sausage is done cooking place each sausage on the sub rolls, followed by layers of roasted red bell pepper, provolone cheese, and caramelized onions. Broil on high for 2-3 minutes or until cheese melted and bubbling.

    Would it be better to brown the sausage first before placing it in slow cooker. I do that with ALL meat before slow cooking it to enhance flavour.

      Hi Kelly, thanks for stopping by and leaving a comment. I like the slow cooker to do all the work for me, so I typically don’t cook anything outside of the slow cooker. You could easily adapt this recipe and brown the sausage first!

    I looove my slow-cooker and this recipe sounds fantastic! Like Kelly above mentioned, I might brown the sausage before for a bit of added flavor. It does take more time + dirty another pan (ugh!) but it’s usually worth it, flavor-wise. =)
