Dinner Made Easy Thanks To #HelloFresh

I love when groceries are delivered right to my doorstep. Don’t you? I mean no need to spend extra money and time driving to the store to pick out all the ingredients for 3 dinners… instead have it delivered right to you. You can still exercise your cooking skills, but with less time spent shopping! Oh and even better… no menu planning required! 

I’m the first to admit if I don’t have a game plan I’m lost during the week. Most week days I’m warn out from cooking all weekend that I have very little energy to cook dinner (even though I still manage to cook dinner every night it sometimes is with a little less vigor)! And menu planning… blah! I loved trying out HelloFresh. It gave me three new recipes that I know I wouldn’t have normally cooked had it not been sent to my door. The box is sent over night in a cooler pack and filled with everyone you would need to cook the meal (sans olive oil, butter, and cooking utensils)! You also get three detailed photo recipe cards that show you what your final product should look like as well as ingredients, nutritional facts, and instructions with photos. Meals can be tailored for vegetarians, couples, or a family of up to 6!

First up, Beef & Broccoli Rabe Tostada with Arugula. Unique dish that I would have never thought to make. By utilizing tortillas you get the tostada base. I would have never thought to mix ground beef with broccoli rabe! It was so good! And of course you can always add your own twist on it. Since I know my husband is a saucy person I drilled a little sour cream on top of his tostada and he loved it (oh and removed the walnuts he isn’t a fan of nuts in his food).

These would even be great as an appetizer while entertaining. Its like a salad and tostada in one!

Next up, I made my neighbor Salmon Fillets with Cashew Crust. She is currently watching what she is eating and its been really hard for me to not share dinners with her. I’m a feeder by nature–that is my job in life! But this was 598 calories (the lowest calories of all three meals), and I knew this would be a treat for her.

First off I’ll say that I would never think to pair salmon with red sauce and lentils all in the same dish. But honestly… it all worked beautifully together! She also loved the crunch of the cashews!

Of course a little fresh basil never hurts anyone… right?

Lastly, we had Turkey Polpette with Basil Tomato Sauce on our third night. I’m the first to admit ground turkey at times can creep me out. Don’t get me wrong. I love turkey, but in the ground form… it gives me the heebee-jeebees. I was a little reluctant to want to make this dish, but I knew my husband would probably enjoy it. So I made it and he did… he loved it! Honestly this meal took me less than 30 minutes to make. Who knew you could make fresh meatballs and pasta so quickly!

Of course seasoning the ground turkey is really key in this dish… The last thing you want is bland meatballs.

    I’ve looked at these before! I love the idea! My husband would love those Salmon Fillets, I’ll have to look into their service a bit more!

    This looks so convenient! I checked it out and the price isn’t terrible either… especially with the coupon. I was honestly expecting them to be quite a bit more.
