I’m so excited to share this recipe with you today. Its a recipe I cook often yet I’ve never shared it with the world and today I’m sharing it for a very special occassion. It’s my dear friend Aggie’s surprise virtual baby shower! If you’ve never visited Aggie’s Kitchen before, head on over there asap and check out her fresh and healthy recipes that the whole family will love. Aggie and I live near each other and I’ve had the opportunity to get to hang out with her in real life a few times now. We also randomly text message each other on any given day. Can I just tell you that I love the girl! We both eat very much alike… mainly vegetarian and every now and then will eat some meat. When I started brainstorming about what I would bring to her virtual baby shower this recipe came to mind.

This is the ideal flexitarian meal to make. I’m pretty sure once Aggie reads this recipe she’ll be making it for her family. Tons of veggies and pasta in a light cream sauce and best of all the meat is on the side. So for those who want to partake in the meat you top the chicken right on top of the pasta! I know Aggie likes to eat healthy but today she can indulge a little with a cream sauce in this pasta!

Like I said, I’ve been making this recipe for years and continue to make this recipe for friends and family or just for myself and my husband. It’s also perfect for a pot luck or baby shower. Katie Original Recipe

Grilled Italian Chicken with Veggies & Bow Tie Pasta

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4

Grilled Italian Chicken with Veggies & Bow Tie Pasta

Ingredients

  • 1lb Chicken Breast
  • McCormick Roasted Garlic & Herb Seasoning
  • 12 oz Bow-tie Pasta
  • 1 tbsp salt
  • 12 oz. Broccoli Florets
  • 10 oz. matchstick carrots
  • 2 tbsp olive oil
  • 1/4 cup salted butter
  • 1 tbsp garlic, minced
  • 8 oz. baby bella sliced mushrooms
  • 1 cup frozen peas
  • 1 cup whole milk
  • 1/2 cup parmesan cheese
  • 1 tbsp parsley
  • 1/8 tsp red pepper

Directions

  1. Preheat grill to medium heat. While grill is preheating, rinse and clean chicken breast and season liberally with McCormick Roasted Garlic & Herb Seasoning. Cook on the grill for 15 minutes, flipping half way or until internal temperature reaches 165 degrees Fahrenheit. Remove from the grill and tent with tin foil until ready to serve.
  2. While the chicken is cooking on the grill cook the pasta for 10 minutes then add in broccoli and carrots and cook for 3 additional minutes, then drain into a colander.
  3. In the same pot add 2 tablespoons olive oil, 1/4 cup salted butter and melt on medium heat for 1 minute. Then add 1 tablespoon minced garlic and for 1 minute. Then add mushrooms and and frozen peas and cook for 3 minutes.
  4. Once mushrooms are cooked then add the pasta/veggie combo back into the pot followed by 1 cup of whole milk, 1/2 cup parmesan cheese, 1 tablespoon parsley, and 1/8 teaspoon red pepper flakes. Stir well and cook for five minutes.
  5. Slice chicken diagonally, dish pasta into bowls and top with grilled chicken if desired.

Notes

For more heat add 1/8 tsp additional red pepper flakes to the pasta.

    I really like the idea of serving the chicken on the side here. It’s the perfect way to feed people with a variety of diets without making anyone feel like they’ve been singled out. Tasty too!

      Cathy that’s why I love this dish so much! Packed full of veggies and although it could be considered a heavy cream sauce its not caked on the noodles so you can still taste the natural flavors of the veggies!
