Apple Cranberry Coleslaw

Barbecue season is upon us. We entertain just about every weekend and have friends and/or family over to swim and cookout. I’m always looking for an easy side dishes that I can prep ahead of time and bring out once our lunch or dinner is ready. I will say that I do try to stay away from the creamy side dishes that could go bad quickly out in our hot Florida weather. However, I do love me some coleslaw and that’s how my recipe for Apple Cranberry Coleslaw was born. The day I made this coleslaw I didn’t have mandarin oranges on hand. That’s what I typically make, a mandarin orange coleslaw. But I did have my beloved Opal apples on hand. What’s so special about these apples? They are non-GMO and low oxidizing apples which means you can cut them they won’t instantly brown. Which is perfect for this coleslaw! But if you can’t find Opal’s don’t worry–you can use other apples but they will start to oxidize and turn brown. So beware of that.

Apple Cranberry Coleslaw

Let’s get back to this coleslaw. Apple and cranberries pair perfectly together. I figured it would give a nice sweet savory flavor to this recipe. I like to prepare this coleslaw a few hours before guests arrive. I find that if it sits for a day or two the red cabbage starts to bleed into the white and green cabbage and the presentation isn’t as nice and crisp. This recipe takes all but maybe 10 minutes to make! You mix the coleslaw dressing in the bowl then chop the apples, stir in the cranberries and bag of coleslaw mix and start mixing. I find it’s best to mix half the coleslaw mix in first then the other half. You want to make sure all the coleslaw is covered with the dressing. The coleslaw needs to sit in the refrigerator for at least an hour. Once it sits the cabbage will begin to shrink. This recipe makes a lot and I’ll be honest you are going to think this is way too much. Once your guest start trying the apple cranberry coleslaw you won’t have any left. Apple Cranberry Coleslaw

Prep Time: 10 minutes + 1 hour

Total Time: 10 minutes + 1 hour

Ingredients:

  • 1 cup Mayonnaise
  • 2 tablespoons white granulated sugar
  • 1 tablespoon Apple Cider Vinegar
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 opal apple, diced
  • 1/2 cup dried cranberries
  • 1 16 oz. bag cabbage mix for coleslaw

Directions:

  1. In a large bowl combine together the mayonnaise, white granulated sugar, apple cider vinegar, salt and black pepper. Whisk until combined.
  2. Next, add in the the diced Opal apple and dried cranberries. Mix well, then add in the the cabbage mix. Mix well and then refrigerate for one hour.
