Last week, I shared with you my Mediterranean inspired hummus toast. Today, I have another quick, easy, and delicious breakfast toast recipe to share with you. This recipe for bacon, egg, and caramelized onion hummus toast is the bees knees! Bonus, if you don’t want to take the time to fry an egg for the toast—it’s still just as amazing on its own with that caramelized onions, crispy bacon, and arugula! Of course, an over easy drippy egg yolk puts this toast over the top.

How to make Bacon, Egg, and Caramelized Onion Hummus Toast

I used the Sabra Roasted Garlic Hummus spread for this toast. If you can find the caramelized onion hummus you can use that too. I liked the additional layer of flavored the roasted garlic leant to the toast.
Once again, I used the whole wheat oat bread as the base bread for this toast. The earthy-ness of the bread complements the sweet caramelized onion, and works perfectly for a filling and delicious breakfast.

The key to making my egg, bacon, and caramelized onion hummus toast is making the caramelized onions and even bacon ahead of time. Making caramelized onions definitely takes a little bit of time. You need to sweat out the onions and cook them for a while to get them soft and caramel in color. You’ll find in my recipe I use the same pan to cook the onions, fry the bacon, and cook the eggs. I cook the eggs on the bacon grease to give the eggs an additional flavor boost. If you don’t mind dirtying a few pans you can cook the onions and bacon at the same time. Or you can bake your bacon and cook your eggs in the onion pan! Multiple options for you to choose.

If you batch cook bacon and caramelized onions on the weekend, it will take less then 10 minutes to make this toast on a busy week day morning. Just reheat the bacon while the toast is toasting. Then layer spread on a thick smear of hummus, caramelized onions, crispy bacon, and a little peppery arugula. Fry an egg and breakfast is served!

How to make a hummus toast bar.  

If your entertaining friends and family this is a fun way to get everyone involved with breakfast. You can set out a few tubs of Sabra hummus, a jar of caramelized onions, crispy bacon, peppery arugula, and even some veggies and cheese along with a tray of over-easy eggs. Everyone can assemble and create their own custom hummus toast for breakfast!

Bacon, Egg, and Caramelized Onion Hummus Toast

  • 1/2 medium onion, thinly sliced
  • 1 teaspoon grape seed oil
  • 2 teaspoons salted butter
  • 4 slices of whole wheat oat toast
  • 1/2 cup Sabra Roasted Garlic Hummus, divided
  • 8 strips bacon
  • 1/4 cup arugula, divided
  • 4 eggs
  • Cracked black pepper to taste


  1. In a large sauce pan, heat on medium heat. Add the grape seed oil to the pan and the thinly sliced onions. Place a lid on the pan and let the onions cook for 5 minutes, stirring often. Add 1/4 cup of water to the pan, mix, and place lid back on to simmer for an additional 5 minutes. Mix periodically and once the onions start to turn caramel in color add in the butter. Mix in and turn off the heat. Once the butter is melted place the onions in a bowl and set to the side.
  2. Return the pan to the stove and cook the bacon until crispy and brown in color (about 6 minutes each side). Remove bacon and place on a paper towel to drain. Keep the pan to cook the eggs.
  3. Toast the whole grain oat bread until golden in color. Then smear 2 tablespoons Roasted Garlic Hummus on to each slice of toast. Then too evenly with the caramelized onions, 2 strips of bacon on each toast, and a few pieces of arugula.
  4. Next, cook the eggs one at a time until over-easy. Carefully, transfer each egg on to a slice of hummus toast. Repeat until all eggs are cooked. Garnish with cracked pepper and enjoy!
