Bacon & Queso Fresco Gaucamole

Jazz up the traditional guacamole with bacon and queso fresco to give your guest a unique twist on a classic Mexican recipe.

We love anything avocado in our home. In fact, it was one of my son’s first foods he ever tried and to this day he still loves avocados and guacamole. I buy avocado’s just about weekly and make at least one-to-two batches of guacamole a week. Some week’s I like to switch it up depending on what I have on hand. Whenever I have bacon and queso fresco cheese on hand I like to make this variation. Every afternoon my son and I have an afternoon snack. It’s typically a dip with either a chip or veggie (or both). I try to switch it up so we both don’t get bored with our afternoon snack. Since we live in Florida, he typically gets to play on our pool deck where he has a sand box and play house while I sit and enjoy the beautiful weather, catch up on email, or even read a magazine. Now, with a new baby in the mix, clearly my days of enjoying some time are limited, but we are still trying to keep up with a similar afternoon schedule. One thing that I try to do is keep our afternoon snack quick and easy and that’s exactly what this Bacon & Queso Fresco Gaucamole is.

Now, let’s get this straight, in our house (like most houses) everything is better with bacon. My son loves bacon and would eat probably a whole pack if I allowed him to. But I won’t. So when I have leftover bacon I sometimes like to add it to our guacamole. Hence, the recipe for Bacon & Queso Fresco Gaucamole.

They key to this recipe is to have the bacon already cooked. Then you can easily crumble up the strips. I like to incorporate 2 strips in the actual guacamole and then add one strip crumbled on top. The same goes with the queso fresco. If your not familiar with this Mexican crumbling cheese you can find it in the processed cheese section in your grocery store. It comes in a round-disk like shape. You simply break off a piece and crumble it in your hands. It’s super soft and light in flavor. Think of it as even more mild than a mozzarella cheese. I like to add a little fresh plum tomato, fresh onion, and garlic as well as lots of freshly squeezed lime. I like to add a little chili powder and cumin to my gaucamole and salt. Salt is a must. I find that it really brings out the flavor in an avocado. So if your looking to change up the traditional guacamole give my recipe for Bacon & Queso Fresco Gaucamole a try. Ingredients

  • 2 Haas Avocados
  • ½ teaspoon kosher salt
  • ½ lime juiced
  • ⅛ teaspoon ground cumin
  • ⅛ teaspoon chili powder
  • 1 tablespoon onion minced
  • 1 clove garlic minced
  • 1 tablespoon plum tomato minced
  • 3 strips bacon cooked and crumbled and divided
  • 2 tablespoons queso fresco crumbled and divided

Instructions

  • In a bowl, peel, pit, and dice the avocados. Sprinkle the salt, cumin, chili powder, lime juice, minced onion, garlic, and plum tomato. Mix until chunky.
  • Chop two strips of bacon, and sprinkle into the guacamole as well as one tablespoon of crumbled queso fresco. Mix well and then top with remaining one strip of chopped bacon and one tablespoon of queso fresco. Enjoy immediately.

Notes

Go to the Mexican market if you need to in order to find queso fresco, because the flavor can’t be substituted.
