Cookie Butter Milkshake

This Cookie Butter Milkshake is a perfect afternoon or evening dessert made with just 5 simple ingredients, a blender, and in five minutes time!

We love milkshakes in my house, yet, I always forget to make them as a quick dessert after dinner. When I do remember, my kids go crazy for them. Milkshakes are a great way to use up whatever leftover ice cream and pantry ingredients. That’s exactly what I did with this recipe for a Cookie Butter Milkshake.

I first fell in love with Biscoff cookies on a business trip many years ago. My husband would tell you that he first fell in love with them in high school. He use to work at our International Airport as a skycap. You know, the people who greet you at the curb and expedite your check-in process. Or maybe you’ve seen them at the luggage carousel ready to help you sling your bags on to a cart and walk them to your car for you? My husband did that only for a year, and then 9-11 happened. Just about everyone at our International airport was laid off.

Before he was laid off he worked at the Delta terminal. That meant… endless amounts of Biscoff cookies. To this day, when we go on a plane ride we mostly only fly Delta to get the cookies. True story. Yes, we realize that we can get the cookies at the grocery store, but theirs something about them–consuming Biscoff cookies thousands of feet in the sky that makes them special.

So yes, we love Biscoff in our house. Otherwise known as cookie butter or Speculoos which is another brand of cookie butter that is found at Trader Joe’s! If you love this sweet butter you might also love my Biscoff Ice Cream or 2 Ingredient Biscoff Fondue.

Ingredients

  • Vanilla Ice Cream – Any kind of vanilla ice cream works well for this recipe. I’m sure chocolate would be tasty, too. But I’ve never tried it with this recipe before.
  • Cookie Butter Spread – I prefer Biscoff Spread, but any cookie butter will work!
  • Whole Milk – You can also use 2% or even 1% milk if you don’t have whole milk on hand.
  • Biscoff Cookies – Just a few of the classic buttery cookies is all you will need for this recipe.
  • Whipped Cream – Fresh, from a can, or even frozen but thawed will work!

Directions

In a blender add the vanilla ice cream, Biscoff spread and whole milk.

Blender set to to 45 seconds filled with whipped cream and cookie spread with cookies on counter.

Blend for 45 seconds. Scrape down the sides if need be.

Then add 3 Biscoff cookies and pulse for 5-15 seconds until cookies are broken and mixed into the milkshake.

Divide evenly among 4 glasses. Top with whipped cream and half a Biscoff cookie.

FAQs

What do you put Lotus biscoff spread on?

You can top it on bread, eat it by the spoonful, or even dip with fruit like apples or strawberries.

How do you make a thick milkshake?

By using ice cream and milk or even heavy cream it will keep your milkshake very thick. Try not to use ice as that tends to water down the milkshake.

Can I substitute cookie butter for peanut butter?

Cookie butter and peanut butter are two totally different things. If you really don’t like cookie butter or can’t find it then you could use peanut butter. It will give a completely different taste. If you do substitute peanut butter you will want to use peanut butter cookies instead.

Tips & Tricks

Here are a few of my favorite tips and tricks I’ve found helpful when making this recipe.

  • Prep – Always prep all your ingredients prior to making the milkshake.
  • Liquid – Add a little milk to help the ice cream blend. The more milk you add the thinner your milkshake will be.
  • Garnish – I love to garnish my milkshakes with whipped cream and additional Biscoff Cookies.

Ingredients

  • 3 cups Vanilla Ice Cream
  • 1 cup Biscoff Spread
  • 1 cup Whole Milk
  • 5 Biscoff Cookies divided
  • Whipped Cream

Instructions

  • In a blender add the vanilla ice cream, Biscoff spread and whole milk. Blend for 45 seconds. Scrape down the sides if need be.
  • Then add 3 Biscoff cookies and pulse for 5-15 seconds until cookies are broken and mixed into the milkshake.
  • Divide evenly among 4 glasses. Top with whipped cream and half a Biscoff cookie.

Notes

  • Cut the recipe in half if you only want to make two milkshakes.
  • Prep all ingredients prior to making the recipe to ensure the recipe moves quickly.
  • Add more milk for a thinner milkshake. Less milk for a thicker milkshake.

    I just made these milkshakes today, so delicious! I skipped the cookie bits in the shake because my preschooler is finicky with textures. We will definitely make them again.

      Tina… funny you mention breakfast. Because my husband demanded this as his breakfast the other morning. I was like “milkshakes for breakfast… ok”!??!? Who can say “no”. I’m pretty sure when my son is older he will think I’m so cool when I allow a milkshake for breakfast (every once in a while).
