I was bored in the kitchen a few days ago, and decided to play around with a new version of stuffed mushrooms. This by far was my husband’s favorite one to date, and easy to boot! I don’t like mushrooms, so to be honest I’ve never tried them–I simply go by his comments. He said that these are like grown up broccoli and cheese bites! He loves the creaminess of the cheese followed by the zing of the pepper in the cheese; “that’s what makes this appetizer so great”.
Prep: 5 minutes
Total: 15 minutes
1. Preheat the broiler.
2. In a small bowl add diced broccoli and 2 tbsp water. Cook for one minute in the microwave. This will help soften the broccoli.
3. Drain the broccoli, and add the pepper jack. Mix well. If the cheese doesn’t start to melt put it in a the microwave for a few seconds to help the cheese melt to the broccoli.
4. Gently scoop the mixture into each of the mushroom caps. Once all the caps are filled bake until golden brown and cheese is bubbling . Serve immediately!
