Nothing says fall to me than butternut squash! Before I moved I was sent the new KitchenAid® Multi-Cooker with KitchenAid® Stir Tower. I was super excited to receive this new countertop appliance and couldn’t wait to start experimenting with it. I’ve made countless meals in the new Multi-Cooker and the Stir Tower is a god-send. Seriously, who has time to stir risotto for 20-30 minutes? The Stir Tower does it all for me! When KitchenAid challenged me to come up with a fall recipe to cook in the new Multi-Cooker I was up for the challenge and thus this recipe for Butternut Squash and Kale Risotto was born.
I love that I was able to cook everything in the Multi-Cooker. I started by sautéing the kale and butternut squash together then clicked the button to the next setting and it was time to start the risotto. I love making risotto and now am finding myself making it more often because of the Mutli-Cooker. Of course that’s not the only thing it can cook. It has more than 10 cooking methods to choose from. My crazy little toddler gobbled up the risotto. Including the chunks of butternut squash and kale! Win-win for me!
