My easy recipe for Chicken and Cilantro Pizza is sure to be a new family favorite pizza recipe. A pre-made crust is topped with salsa, cooked seasoned and diced chicken, Monterey jack cheese, and of course cilantro.

I hosted a House Party sponsored by BOBOLI® pizza crust. This Chicken and Cilantro Pizza was my favorite pizza (ok, tied with the Honey Mustard Chicken Pizza). I used my homemade salsa to give it my own personal touch.
Ingredients
- 12 inch BOBOLI® Thin Pizza Crust
- Chicken Breast
- Salsa
- Cheese
- Cilantro
- Chilies
- Olive OIl
- Salt & Pepper
- Avocado
Directions
- Preheat grill for 10-15 minutes.
- Brush a dash of olive oil on each side of the crust. Grill crust 2-4 minutes on each side. Remove from grill.
- While the pizza crust is cooking; in a bowl, mix cooked chicken, cilantro, lime juice, chilies, salt and pepper.
- Take grilled pizza crust, and spread salsa on crust and add cheese. Top with chicken and cilantro mixture.
- Place crust back on grill to warm for 8-10 minutes or until cheese is melted.
- Slice pizza, and add sliced avocado to garnish pizza. Enjoy

Depending on the size of your crust will depend on how many people it will feed. This recipe using a 12 inch BOBOLI® Thin Pizza Crust serves about 8 people. Or 8 individual slices.
1 cup of diced cooked chicken is about one small chicken breast.
Substitutions
Here are a few of my favorite substitutions when making cilantro pizza.
- Chilies – I like to use a can of diced green chilies for this recipe.
- Cheese – If you don’t have Monterey Jack Cheese you can use cheddar cheese or for a spicier pizza pepperjack cheese!
- Pizza Crust – You can always make your own pizza crust or adapt with other brands of pre-made pizza crust.
- Gluten Free – Make this recipe gluten free by using a gluten free pizza crust.
- Dairy Free – Use dairy-free or plant-based cheese for this recipe to make it dairy free.
