Roasted Jalapeno Poppers

I’ve talked about our plethora of jalapeno’s this season at my house in a few post last month.   Somehow I had yet to cook a stuffed jalapeno, so on a whim I created this very tasty recipe! Best of all you only need 5 ingredient for this recipe! Pictured above are the jalapeno’s from my container garden that had just been picked, and were ready to be stuffed with creamy goodness!

Prep: 5 minutes
Cook: 20 minutes
Serves: 5 (1 each)


  • 5 large jalapeno’s
  • 3 tbsp whipped cream cheese
  • 1 tbsp bacon bits
  • 5 slices of sundried tomato
  • drizzle of oilve oil
  • salt and pepper to taste

1. Pre-heat the oven to 400 degree’s. 

2. While the oven is pre-heating cut the tops off of the jalapeno and gently scrape the seeds out. Wash well and then dry. 

3. In a small bowl add cream cheese and bacon bits. Mix well and set to the side. 
4. Place one sundried tomato in each of the jalapeno’s and then stuff with cream cheese mixture. Place stuffed jalapeno’s on baking sheet; drizzle with oil and salt and pepper to taste.  

5. Tent a piece of tin foil and bake for 1o minutes; pull them out of the oven and turn them baking them an additional 8 minutes covered, then remove the tin foil and bake exposed for the remaining 2! Once the poppers are cooked let them cool for 5 minutes and then enjoy!
