You guys, I’m at it again. I’ve created a new slow cooker stuffed pepper recipe. This time it’s using the delicious Laura’s Lean Beef. I’ve packed these stuffed peppers full of veggies, brown rice, quinoa, and fire roasted tomatoes. Even my non-quinoa loving husband loved these peppers. And my 1 year old devoured them including all the vegetables that were stuffed in the peppers. This never happens. He is truly a meat and potato boy. So I’m constantly trying to figure out ways to sneak in the veggies. So of course I was thrilled when he not only ate the beef and the rice but also ate the carrots and zucchini. He couldn’t get enough of it. And it wasn’t a fluke. He ate these for lunch the next day and loved them just as much.
These Slow Cooker Beef, Brown Rice, Quinoa and Veggie Stuffed Peppers are easy to make. You can easily make the filling the night before and then put the peppers together the next day before you leave for work. Let them cook in the slow cooker all day and when your return from work or the days activities dinner will be served. The day I made these we were house hunting. Can I just tell you how nice it was after a long day of looking at house after house to come home to dinner already cooked? The person who invented the slow cooker is pure genius!
