What do you do when you still have leftover turkey and cranberry after the holidays? You make an individual Turkey Cranberry Flatbread! Super simple to put together and full of flavors! Your family, friends, and even yourself will forget that some of the ingredients in the flatbread were part of the holiday meal!
If you love Panera’s turkey cranberry flatbread I think you’ll love my version! It’s just as good if not better. Years ago, I made this for lunch for myself, while my then baby son napped. It was pure bliss. Part of me was sad that I had never thought of making a leftover turkey and cranberry flatbread like this before now.
I topped the flatbread with Boursin cheese and the tang from the leftover cranberry sauce compliment each other perfectly. This leftover turkey and cranberry flatbread would make for a perfect after holiday lunch or even a party appetizer!

Ingredients
- Flatbread – I love using Flatout Flatbreads. I always have a package on hand so I can whip up a quick lunch or even dinner. They last for a while too, so you don’t have to worry about using them up right away.
- Boursin – I always have a package of the garlic and herb on hand. If you don’t have Boursin any soft spreadable cheese will work like goat cheese or even cream cheese.
- Cranberry Sauce – You can use homemade cranberry sauce or canned. Either works!.
- Turkey – A little bit of leftover cooked turkey is all you need.
- Parsley & Black Pepper – I like to use dried parsley but fresh parsley works, too. I also like freshly cracked black pepper verse the already ground black pepper.
Directions
- Preheat the oven to 450 degrees Fahrenheit.
- Pre-bake the flatbread for 2 minutes.
- Then, smear Boursin cheese on the top of the flatbread. Followed by the cranberry sauce. Sprinkle mozzarella cheese on top and arrange sliced turkey breast. Sprinkle with parsley and black pepper.
- Bake for 5 minutes or until the cheese has melted and is golden brown.
- Slice into 4 pieces and enjoy immediately.

The calorie count from traditional pizza to flatbread pizza is similar. Because the flatbread is so thin people tend to eat more which makes the calorie count similar.

- Quantity – Like I mentioned above, this recipe is for one flatbread; however, you can easily make multiple flatbreads at once. Just multiply the ingredients.
- Baking – You can use the oven or I even bake this in my toaster oven since it was only one, but if you are making a few flatbreads feel free to turn on the oven. I always place the flatbreads on a baking sheet.
- Cheese – If you don’t have Boursin on hand you can use any soft cheese. I have also used whipped cream cheese or even goat cheese!
