Olive oil, garlic, beet greens, salt and pepper.
Chop greens into even size pieces.
Place the greens in water and let sit for 5 minutes. Repeat until greens are thoroughly washed.
In a large pan, place the olive oil and garlic then cook until fragrant.
Add greens to the pan and cook for 10 minutes. Greens should begin to wilt, carefully stir and cook for an addition 5 minutes.
