Sweat the carrots, onion, celery, and garlic in a little bit of broth until soft.
Add seasoning, tomato sauce, pearled couscous, and broth to a pot.
Bring to a simmer and cook for 15 minutes.
Add spinach, chickpeas, and diced tomatoes. Simmer for 5 minutes.
Ladle into bowls and top with Parmesan cheese if desired.
