Eggs, Flour, Water, and Salt
Mix all ingredients using a flat paddle attachment then switch to a dough hook and mix for 2 minutes longer.
Kneed by hand for 2 minutes then form a ball and wrap with plastic wrap. Let it sit for 25 minutes.
Cut into 4 pieces. Cover what you don't use.
Dust dough with flour then flatten down.
Run the pasta through the roller attachment.
Work your way up to setting 5.
Feed the pasta sheet through the KitchenAid pasta attachment.
Dry for 10 minutes before boiling.
