Ingredients

  • 10 oz. RO*TEL Original Diced Tomatoes & Green Chilies
  • 16 oz. Velveeta cut into 1-inch cubes

Instructions

  • Place the RO*TEL and cubed pieces of Velveeta cheese in a medium size sauce pan.
  • Cook and cook over medium heat. Stirring frequently for about 5 minutes or until cheese is melted. Then reduce the heat to low until ready to enjoy.
  • Serve warm with corn tortilla chips.

Notes

  • Ro*Tel - Any style Ro*Tel works for this recipe. If you like super spicy queso I recommend the "hot" Ro*Tel!
  • Keeping Queso Warm - You can keep the queso warm by placing it in a mini slow cooker and keeping it on low or "warm" mode.
  • Reheating Leftovers - If you have leftover queso you can easily reheat the queso in the microwave in 30 seconds increments or until warm. You can also place the leftover queso in a pot and heat on the stove.
