Ingredients

  • 1 cup instant oatmeal
  • 1.5 cups peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut flakes
  • ¼ cup honey
  • ½ cup Barleans Energy Blend Flax, Chia, Coconut, and Panax Ginseng
  • ½ cup dairy free mini chocolate chips

Instructions

  • Place all the ingredients (minus the chocolate chips) in a stand mixer, fitted with a paddle attachment. Mix on medium-low until mixed together. Then add in the chocolate chips and mix well.
  • Place in the refrigerator and let rest for at least 30 minutes. Using a cookie scoop, scoop into balls (roll with hands), and place in an airtight container. Repeat until all the batter is rolled. Store in the freezer and enjoy!

Notes

These are dairy-free and gluten-free! Keep in mind the energy blend and who you are serving it to. You can use regular protein powder as well.
