Cabbage and Sausage Soup

If you love Polish food you will love my Cabbage and Sausage soup. This hearty meal is full of kielbasa, cabbage, potatoes, and carrots and is cooked in under an hours time.

Equipment

Ingredients

  • 1 tablespoon olive oil
  • 1 white onion diced
  • 2 celery diced
  • 1 cup shredded carrots
  • 4 cloves garlic
  • 14 ounces kielbasa quartered
  • 1 tablespoons dijon mustard
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 1 tablespoon parsley
  • 2 cups small red potatoes cut in half
  • 64 ounces chicken broth
  • 1 Small Head of Cabbage cut into 1-inch pieces
  • 1 tablespoons Fresh Dill minced

Instructions

  • In a large pot, add the olive oil. Then add in the onion, celery, shredded carrots, and garlic. Cook on medium heat for 5 minutes stirring often. Then add in the kielbasa. Cook for an additional 5 minutes.
  • Then add in the dijon mustard, parsley, salt, and pepper. Mix well .
  • Place the cut potatoes in with the rest of the vegetables and meat. Pour in the broth.
  • Mix and bring to a boil, then lower the heat and simmer for 10 minutes. Add the cabbage and fresh dill. Cook for an additional 20 minutes or until potatoes and cabbage are cooked through. Mix again and ladle into bowls. Enjoy.

Notes

  • Mustard - If you don't have dijon mustard you can use a teaspoon of mustard powder, or any other style mustard you enjoy.
  • Potatoes - If you can't find small red potatoes you can use larger red potatoes that you chop into even size pieces.
  • Dill - You can use dried dill if you don't have fresh on hand. Simply add double the amount of dried dill this recipe calls for.
