Southern Style Breakfast Potatoes are a mix of white potatoes and sweet potatoes that are par-boiled then fried in a skillet with butter, onions, and seasonings. These potatoes are made in under an hour from start to finish, and make for the perfect breakfast side dish.
Wash and dice red potatoes. Place in a stock pot, salt the water well, and boil on high for 20 minutes.
While the red potatoes are cooking wash, peel, and dice the sweet potato. Add the sweet potatoes once the white potatoes have gotten to the 10 minute mark. Boil until al dente.
During the last few minute of cooking melt the butter in a large frying pan on low heat (making sure the butter does not brown).
Drain the potatoes and add them directly the frying pan, add the onion on top, and all the spices. Let the potatoes sit in the pan on medium heat for 1-2 minutes before mixing. Cook until crust has formed on potatoes but aren't burnt (about 10-15 minutes). Mix periodically.
Notes
Potatoes - You can use 12 small red potatoes or 6 large.
Onions - If you don't have fresh onions on hand you can use frozen diced onions or even dried onion flakes.
Dairy Free - If you are on a dairy free diet, substitute dairy butter for non-dairy butter.
Gluten Free - Good news, these country style potatoes are naturally gluten free!
Serving Size - If you aren't feeding a large crowd or don't want a lot of leftovers you can cook 6 small red potatoes and only 1 sweet potato.
