{Guest Post} Reduced-Fat Cucumber Salad

Ingredients

  • ½ cup reduced-fat sour cream
  • 2 tablespoons fresh lemon juice approximately one lemon
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon sugar
  • salt and pepper to taste
  • 4 cucumbers seeded, halved lengthwise and thinly sliced (I used the slicer blade on my food processor)

Instructions

  • In a medium bowl, combine all ingredients except cucumbers. Use a whisk or a fork to combine until smooth.
  • Add cucumbers and stir to coat. Refrigerate until ready to serve. Best consumed the same day it is prepared.
