- 1 pint grape tomatoes halved
- 1 tbsp olive oil
- 1 tsp garlic minced
- 1 tbsp fresh parsley chopped
- salt and pepper
- 1/2 cup ricotta cheese
- 1 Whole Wheat Baguette
In a medium bowl, combine halved grape tomatoes with olive oil, garlic, fresh parsley, and salt and pepper to taste. Mix well and set to the side.
Slice baguette in 1/4-inch thick pieces. Toast until golden brown.
Spread ricotta on each baguette and top with grape tomatoes. Serve and enjoy!
