Ingredients

  • 1 pint grape tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1 tablespoon fresh parsley chopped
  • salt and pepper
  • ½ cup ricotta cheese
  • 1 Whole Wheat Baguette

Instructions

  • In a medium bowl, combine halved grape tomatoes with olive oil, garlic, fresh parsley, and salt and pepper to taste. Mix well and set to the side.
  • Slice baguette in ¼-inch thick pieces. Toast until golden brown.
  • Spread ricotta on each baguette and top with grape tomatoes. Serve and enjoy!

Notes

  • Make the tomatoes ahead of time for even easier entertaining.
