Air Fryer Breakfast Potatoes

Air Fryer Breakfast Potatoes are made in 20 minutes time with only 15 minutes of cooking time in the Air Fryer. Crispy potatoes paired with onions and bell peppers make for a delicious breakfast side dish.

Ingredients

  • 8 small Red Potatoes
  • 1 tablespoon Grapeseed Oil
  • 1 teaspoon Season Salt
  • ½ teaspoon Smoked Paprika
  • ½ teaspoon dried parsley
  • teaspoon black pepper
  • ½ White Onion diced
  • ½ red bell pepper diced

Instructions

  • Preheat the Air Fryer at 400 degrees Fahrenheit or until machine tells you to place food in Air Fryer.
  • While Air Fryer preheats, dice the potatoes. Add the diced potatoes to a bowl, drizzle with grapeseed oil, and sprinkle with season salt, smoked paprika, parsley, and black pepper. Toss until incorporated.
  • Once Air Fryer is preheated, add the potatoes to the basket. Shake until they are in a single layer.
  • Cook for 15 minutes.
  • While the potatoes cook, dice the onions and bell pepper. Toss in the bowl used for the potatoes. Add the onions and peppers at the half way mark of cooking flipping the potatoes so they brown on all sides.
  • Remove from the Air Fryer using a spatula and enjoy immediately.

Notes

  • Soak Potatoes - I have tested this recipe both ways and have found that if you soak the potatoes in cold water for 5-10 minutes before cooking it removes some of the starch making for a crispier potato.
  • Onions and Peppers - You do not have to add the onions and peppers to the potatoes if you don't have the vegetables and/or simply don't like them. You can also use red onion or any other color bell pepper you have on hand. Just note that red, yellow, and orange bell peppers are sweeter in flavor. Whereas, green bell peppers are stronger and not as sweet.
  • Seasonings - You can use any combination of seasoning for breakfast potatoes. The combination of seasoning I have listed is just what I prefer for breakfast potatoes.
