Seven Layer Greek Dip

Everyone's familiar with Mexican layered dip - this takes that concept and puts a Greek spin on things.

Ingredients

  • 2 cups hummus
  • 1 cup kalamata olives chopped
  • 1 cup canned artichoke hearts chopped
  • ¾ cup tomato chopped
  • ¾ cup cucumber peeled and chopped
  • ½ cup feta
  • 1-½ cups greek yogurt
  • 3 tablespoon fresh dill
  • 2 teaspoon olive oil
  • 3 tablespoon cucumber minced
  • 1 teaspoon lemon juice
  • 1 tablespoon garlic minced
  • salt & pepper to taste
  • pita chips

Instructions

  • In a large bowl you'll want to make your own tzatzki sauce. Combine greek yogurt, dill, garlic, diced cucumber, lemon juice and salt and pepper to taste. Mix well then slowly add in olive oil.
  • Place the tzatziki mixture in a large circular glass serving dish and begin layering the dip; tzatzki, chopped olives, hummus, chopped artichoke hearts, feta, topped with diced cucumber and tomato. Chill for up to 4 hours before serving or serve right away with pita chips.

Notes

This is best served with hearty, thick pita chips! Veggies would also work well.
