In a medium bowl, combine halved grape tomatoes with olive oil, garlic, fresh parsley, and salt and pepper to taste. Mix well and set to the side.
Slice baguette in ¼-inch thick pieces. Toast until golden brown.
Spread ricotta on each baguette and top with grape tomatoes. Serve and enjoy!
