Lasagna Skillet

Craving lasagna without the hassle of layering and baking while using all of your pots and pans? My lasagna skillet recipe is the perfect combination of delicious comfort food dinner and quick dinner that is made in under an hour's time!

Ingredients

  • 1 tablespoon Olive Oil
  • 1 tablespoon Unsalted Butter
  • ¼ cup White Onion minced
  • 3 Garlic Cloves pressed
  • 1 pound Lean Ground Beef
  • 1 pound Ground Pork
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Italian Seasoning
  • teaspoon Black Pepper
  • 1 tablespoon Granulated Sugar
  • 28 ounces Crushed Tomatoes
  • 15 oz. Diced Tomatoes
  • 2 cups Gigli Pasta*
  • 1 cup Water
  • 8 ounces Ricotta Cheese
  • ½ cup Grated Mozzarella Cheese
  • ¼ cup Fresh Basil chiffonade and divided
  • ¼ cup Parsley diced and divided

Instructions

  • Heat a large skillet on medium-low heat. Place the olive oil and butter in the skillet and let melt for one minute, then add minced onion and garlic. Sauté for 2 minutes until soft.
  • Next, add in the lean ground beef and ground pork. Sauté and cook for an additional 5 minutes, making sure to break the meat up with a wooden spoon and mixing the vegetable mixture in with the meat.
  • Once the meat is fully cooked (no pink is showing) season the meat with the salt, Italian seasoning, black pepper, and granulated sugar. Mix well then pour on the crushed tomatoes and diced tomatoes. Mix well again.
  • *Next, add the noodles to the skillet. Pour the water on top, mix again until all pasta is covered.
  • Place a lid on the skillet, reduce heat to low and simmer for 15 minutes until noodles are soft.
  • Remove lid, mix in fresh parsley and basil. Then, using a cookie scoop begin adding dollops of ricotta to the pot. Mix in then add another layer of ricotta. Sprinkle the top with additional shredded mozzarella cheese.
  • Place the lid on top and cook for an additional 3-5 minutes until mozzarella is melted. Serve lasagna immediately and top with Parmesan cheese if desired. 

Notes

  • Pasta - I have only found the *Gigli pasta at Trader Joe's if you can't find this shape of pasta at your grocery store you can use 10-12 lasagna noodles broken up (if using lasagna noodles you'll want to layer before pouring on some of the sauce and cook for upwards of 20 minutes).
  • Oven - You can place the entire skillet in the oven if your skillet is oven proof to melt the cheese.
  • Vegetables - To save time you can use pre-chopped onions and minced garlic in water.
    • Carrots - I love to add a carrot into my meat sauce. Make sure you finely chop the carrot.
