Cavatappi Amatriciana

INGREDIENTS

Cavatappi, peeled tomatoes, pancetta, carrot, olive oil, onion, red pepper flakes, pecorino romano

SAUTE

Saute pancetta then add onions, carrot, and garlic until golden in color. 

ADD TOMATOES

Add  the tomatoes and squish them.

SIMMER

Simmer sauce for 25 minutes until thickened.

ADD COOKED PASTA

Add the cooked pasta, pasta water, and pecorino cheese. Mix well.
