Roasted Garlic & Herb Pork Loin Filet, baby carrots, pearl onions, water, and cornstarch.
Preheat Instant Pot to sauté, add oil when hot, and brown pork loin on all sides.
Remove pork loin, add onions and carrots with water, and scrape brown bits.
Add back the tenderloin on top of the onions and carrots, cover and cook.
Remove pork, onions, and carrots, then make a gravy with remaining broth and cornstarch.
Slice pork loin and top with gravy, pearl onions, and baby carrots.
