Chicken Enchilada Soup

SLOW COOKER

Crockpot Chicken Enchilada Soup takes minutes to put together in the morning and yields a delicious dinner after a busy day at work and school.

INGREDIENTS

Chicken breast, onion, pepper, rotel, corn, black beans, cilantro, chicken broth, enchilada sauce  and rice.

LAYER

Place the ingredients in the slow cooker. Place lid on top and cook for 5 hours.

SHRED

Remove the cooked chicken, shred and then add in the rice and cilantro.

LADLE

Ladle into bowls and top with sour cream, shredded cheese, and avocado.
