Equipment

  • Slow Cooker

Ingredients

  • 3-4 lb. Boneless Turkey Breast
  • 1 teaspoon Poultry Seasoning
  • ½ teaspoon Salt
  • teaspoon Black Pepper
  • 4 tablespoon Salted Butter divided
  • 1 Onion diced
  • 2 Stalks Celery diced
  • 1 Sweet potato cubed
  • 12 oz. Cubed Stuffing Mix
  • 2-½ cups Low Sodium Chicken Broth

Instructions

  • Spray non-stick cooking spray all around the inside of the slow cooker. Then place the turkey breast in the bottom of the slow cooker. Season both sides with the poultry season, salt, and pepper. Add 2 tablespoons of butter on top of the turkey breast (cubing the butter into 4 smaller pieces).
  • Add the onion, celery, and sweet potato on top of the turkey breast.
  • Then pour the cubed stuffing mix on top of the vegetables.
  • Pour the low sodium chicken broth on top of the stuffing mix. Add the remaining 2 tablespoons of cubed butter on top of the stuffing. Place the lid on the slow cooker and cook on HIGH for 5 hours.
  • Once the dinner is done. Carefully remove the turkey breast from the bottom of the slow cooker. Insert a meat thermometer in the meat to ensure the internal cooking temperature has reached 165 degrees Fahrenheit. Slice the turkey breast and mix the stuffing into the broth to ensure all stuffing has been coated and is soft. Serve immediately.

Notes

  • Turkey Breast - If you cannot find a boneless turkey breast you can remove the turkey breast off the bone yourself or ask your butcher to cut the breast off the bone for you. I have not tested this recipe with a bone in turkey breast. I would be afraid bones would fall out and get mixed into the stuffing mixture.
  • Vegetables - If you don't like sweet potatoes you can omit the potato all together. Or you can even add in diced carrots and peas if you desire. Totally optional but give you multiple options.
  • Stuffing - If you prefer cornbread stuffing over traditional bread stuffing use a bag of cornbread stuffing mix instead.
  • Serving suggestions - You can eat this meal as is; however, I like to add mashed potatoes, gravy, and cranberry sauce. I'll even make green bean casserole, sauted green beans, or creamed spinach.
