I love to make this salad year round… it’s super easy and tasty too! I created this recipe after I had ran out of lettuce one day. Once I made this recipe I realize that lettuce is not the most important ingredient in a salad! This salad is light and refreshing and can be enjoyed year round!

Ingredients
Ingredients for the Dressing:
- 3 tablespoon extra-virgin olive oil
- 3 tablespoon balsamic vinegar
- 1 teaspoon fresh minced garlic
- ¼ teaspoon salt & black pepper
Instructions
- In a tall container add all the ingredients for the dressing, mix well, and place in the refrigerator to chill.
- Cut the tomatoes into 1 inch chunks, do the same with the cucumber, and thinly slice the red onion. Add equal parts of all three ingredients into individual salad bowls (or just add everything into one big bowl).
- Add a 4-6 olives per person, and some Parmesan cheese! Before your ready to eat shake dressing well, and add to the salad!
Notes
I highly recommend mixing up your own dressing like in the recipe! If you are in a real pinch, you can use a bottle.
