Fresh Corn Saute with Green Onions and Red Peppers

I feel like the summer-like temperatures have officially arrived here in Florida. We are hitting 90 degrees most days and my home is starting to stay warm during the day-despite how long I run my air conditioning. My fans are on and we are swimming daily. I’ve officially started making more summer-like meals. I started making corn sautes last year and I’m kind of obsessed. As soon as I see corn on sale I’m incorporating them into my weekly meal plan. I’ve never shared my corn saute’s in past years so this year I’ll be sharing a few of my favorite corn side dishes. Today, I’m sharing my recipe for Fresh Corn Saute with Green Onions and Red Peppers.

Fresh Corn Saute with Green Onions and Red Peppers

This corn saute comes together very quickly. The key to this side dish is prepping all of the ingredients first. I remove the corn kernels from the corn on the cobs using an OXO Corn Stirpper or Corn Peeler. Both work equally as well and do the job quick and efficiently. Then dice the green onions and red bell pepper.

Once all of your vegetables are prepped you’ll preheat a pan with unsalted butter. Once it’s melted add the corn. Saute for 3 minutes then add in the diced red bell pepper and green onion. Mix well and saute for another 3 minutes. You’ll season the corn with the salt, black pepper, and thyme and then reduce the heat down to medium a low and cook for just 4 minutes longer. In 10 minutes time you’ll have a delicious and flavorful side dish. And only a few ingredients in the side dish packed full of flavor.

Even my picky toddler loves it although I can’t confirm that he eats the green onions or red bell pepper but it’s on his plate and in front of him. Ingredients

  • 1 tablespoon salted butter
  • 2 cups fresh corn kernels 4 ears of corn
  • ½ cup diced red bell pepper
  • ¼ cup green onions diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme

Instructions

  • In a large skillet, melted butter on medium-high heat.
  • Add the fresh corn to the pan and cook for 3 minutes. Add the red bell pepper and green onions to the pan. Cook for an additional 3 minutes. Season with salt, pepper, and fresh thyme and cook on medium-low heat for an additional 4 minutes.

Notes

I highly recommend using fresh sweet corn cut off the cob, but in a pinch you can use frozen or canned.

    This was a wonderful tasty quick side dish. I used frozen corn instead of fresh and it was great. Will be in my regular rotation for side dishes.
