July marks National Ice Cream Month. If you follow any cooking blogs you’ve probably seen a plethora of ice cream recipes in the past week. My hopes were to post this on July 1st to kick off the month, but that didn’t happen since I was out of town and didn’t plan well enough in advance. But I like the motto “better late than never”, so here is my first of many summer ice cream post!
This ice cream does take a lot of prep work. Not only do you have to make the ice cream batter ahead of time but you also need to make the egg-less cookie dough. You will want to roll your dough into an oval shape and refrigerate it until it’s hard. I didn’t pull my dough out of the refrigerator until the ice cream was pretty much done churning. I chopped up the dough into large chunks, and crumbled it throughout the batter. Making sure to keep the dough as even as possible throughout.
Look at how amazing this ice cream looks… I don’t like to be stingy on the chunks of cookie dough. Let’s face it. This is the best part of chocolate chip cookie dough ice cream. You’ll notice there are quite a few chocolate chips within the ice cream. Next time, I would use the mini chocolate chips. At times it was a bit too much and because they were frozen they were a tad to hard to chew.
This ice cream was good but to be honest, not as great as my original Chocolate Chip Cookie Dough Ice Cream. {Ironically I posted that recipe a year ago tomorrow.} I only ate a few bowls and I brought the rest of the container into work where I let my coworkers be the judge. I think they were all too nice to me because they all didn’t say one bad thing about the ice cream. Then again–it’s double chocolate chip cookie dough ice cream… and it’s homemade.
Because I live in sunny Florida I tend to make a lot of ice cream (year round). I love my ice cream and seriously need another freezer just to store it all in. If you love cookie dough I’d suggest you try this recipe (but use the mini chocolate chips). Enjoy!

2 cups heavy cream

4 large egg yolks
Pinch of coarse salt
2 tsp. vanilla extract
1½ cups whole milk
1 cup chocolate chips (semisweet or bittersweet)

Directions:
1. To make the cookie dough, stir together the butter and sugar in a mixing bowl until smooth. Mix in the flour, then the vanilla and chocolate chips. Form the dough into a disk, wrap in plastic wrap and refrigerate until firm.

2. To make the ice cream, melt the butter in a medium saucepan over medium-high heat. Continue heating, stirring often, until the butter is a deep golden brown color, being careful not to burn it. Whisk in the heavy cream and heat until simmering. Meanwhile in a medium bowl, whisk together the brown sugar and the egg yolks until pale and fluffy. Once the cream mixture is warm, add a small amount to the bowl with the egg yolks, whisking constantly. Slowly whisk in the rest of the cream. Mix in the salt. Return the egg-cream mixture to the saucepan and heat until just slightly thickened, and the temperature reads 170-175? F on an instant-read thermometer. Immediately remove the mixture from the heat and pour through a fine mesh sieve into a bowl. Stir in the vanilla extract and the whole milk. Cover and chill thoroughly in the refrigerator.
3. Once the mixture is chilled, freeze in an ice cream maker according to the manufacturer’s instructions. Chop the disk of cookie dough into small chunks. As soon as the mixture is done churning, transfer to a bowl or airtight container and stir in the {mini} chocolate chips and the chunks of cookie dough. Store in the freezer until firm.

Try heating three parts chips to one part oil, and then swirling in at the end of the churn. Apparently, the chocolate will all freeze up immediately, but will also break up. Kind of like a magic shell. I read somewhere at the start of summer about making your own extra oily chocolate chips just for this purpose. They will have more flavor in the ice cream and not just clump up in your mouth. The swirl seemed a nice cheat. Can't remember where I read either. Love your recipe though. Thanks for sharing.
