Grilled Corn with Cilantro Yogurt Sauce

Grilled Corn with Cilantro Yogurt Sauce

Fire up the grill and make my recipe for grilled corn–top it with the most delicious and guilt-free cilantro yogurt sauce and a dash of ancho chile pepper. We love corn in our home, and thankfully corn is in season right now. Some weeks I feel like we are eating it with every meal. Totally ok in our book. Since I like to keep dinner as mess-free as possible grilling corn has been a great alternative and I feel like I’ve pretty much mastered grilling corn that is not over done and charred and not undercooked! The key is keeping it moist. I typically coat my corn in a little olive oil and then season it with salt and pepper before it hits the grill. I could seriously eat it just like that; however, lately I’ve been digging adding sauces to corn instead of just good old butter.

I partnered with my friends at Stonyfield in the Made to Matter campaign. It’s a campaign sponsored by Target every year. They choose a collection of options that are organic, non-toxic, non-GMO, fair trade and more. We use so many of the products on this years list. I was sent a Target gift card plus a few products from the collections; Annie’s Bunnies, Hyland’s Cough Syrup, and Justin’s nut butters to name a few of the things. All the brands I already use. And I’m so happy that Stonyfield made the list! I love that Stonyfield is organic, non-GMO and made without the use of toxic persistent pesticides, artificial hormones and antibiotics. Makes me feel good feeding it to my family knowing that they are eating wholesome food. And guess what… I’m going to their headquarters in just a few weeks to visit the organic farms and the processing plant where Stonyfield is made!

One of the exciting things about partnering with Stonyfield is that I learn about new products before they hit the shelves. I’m excited I can finally tell you about a new product (so new I couldn’t even get my hands on it hence you have a different yogurt recipe none-the-less but delicious)! Stonyfield has two new Target Made to Matter exclusives: Stonyfield Organic Super Seeds and Stonyfield Organic Super Grains Greek Yogurt. Organic Super Seeds features nonfat Greek yogurt with softened flaxseed, in orange-cranberry, blueberry and coconut flavors. Stonyfield Organic Super Grains pairs nonfat Greek yogurt with buckwheat and quinoa, in strawberry, maple and vanilla flavors. Each 5.3oz cup is packed with protein for a wholesome, truly satisfying snack – morning, noon or night. All six flavors are certified organic and gluten-free, and completely delicious.

So let’s get back to the Grilled Corn with Cilantro Yogurt Sauce for a minute. It’s delicious. My toddler loved the corn– that is until I decided to take away the cob because he was threatening me with throwing it on the ground. He loves corn. Like goes crazy for it and learning how to eat it off the cob. So I typically shave a little off and then give him the cob to gnaw on. I wasn’t sure if he would like the cilantro yogurt sauce especially since I sprinkled a little ancho chile pepper on top, but it didn’t phase him. I’ve been slowly learning that he likes the spices! I can say that this recipe for Grilled Corn with Cilantro Yogurt Sauce is toddler approved!

Ingredients

  • 12 ears corn on the cob
  • 2 tablespoon olive oil
  • salt and pepper to taste
  • ½ cup Stonyfield Fat Free Plain Yogurt
  • ¼ cup cilantro
  • ⅛ teaspoon garlic powder
  • dash of onion powder
  • dash of black pepper
  • dash of ancho chile pepper

Instructions

  • Preheat the grill to high heat. While grill is preheating begin to clean the corn. Pat corn dry and drizzle olive oil on top, coating all sides of corn. Sprinkle with salt and pepper to taste.
  • Cook on grill for 15 minutes until all sides are cooked and lightly toasted.
  • While corn cooks make the cilantro yogurt sauce. In a blender combine the Stonyfield Fat Free Plain Yogurt, cilantro, garlic powder, and black pepper. Blend for 20 seconds until smooth. Place to the side.
  • Remove the corn off the grill. Drizzle with cilantro yogurt sauce and sprinkle a dash of ancho chile pepper on top and enjoy.

Notes

This yogurt sauce is also great on rice or tacos and also tucked into wraps and sandwiches.
