Spinach & Feta Brown Rice

Spinach & Feta Brown Rice

Are you getting tired of the same old side dishes week after week? I am, so that’s why I’ve started creating some new side dishes in the kitchen. Last week I shared my recipe for grilled corn with cilantro yogurt sauce and today I’m sharing this recipe for Spinach & Feta Brown Rice. The earthy/nutty flavor of the brown rice compliments the fresh dill and spinach followed by the tanginess of the feta cheese. I always love being able to sneak in veggies and that’s exactly what I was able to do with this rice. My son loved the rice and ate up all the little bits of spinach. So that’s a win in my book!

Spinach & Feta Brown Rice

I have been cooking my rice in a rice cooker for years now. I had bought the rice cooker for my mom one Christmas after she requested a rice cooker and then it sat for a couple years. When I moved out of the house I asked my mom if I could take it since she had never used it. She said yes and I’m so glad she let me take that $30 rice cooker. Yep, I have a cheap rice cooker. Nothing fancy, but boy can it cook rice. It’s the only way I ever cook rice. One of these days I’ll upgrade to a higher-end rice cooker but for now I like my inexpensive rice cooker–it cooks my rice perfectly every time. So if you don’t have a rice cooker you will need to cook this rice on the stove top. I will be the first to admit that I do not have much experience cooking rice on a stove top. Crazy right? The recipe will take much longer if you need to cook the rice on the stove top. So just be advised. And if you are using the stove top method to cook the rice you’ll need to allot more time for cooking. Cook the rice like you normally would then mix in the chopped spinach, dill, and feta cheese.

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • ½ teaspoon salt
  • ¼ teaspoon dill
  • 2 cups spinach chopped
  • ¼ cup tomato basil feta crumbled

Instructions

  • In a rice cooker combine the brown rice, water, and salt.
  • Once the rice is done cooking mix in the dill, chopped spinach and crumbled tomato basil feta. Serve immediately.

Notes

I highly recommend a rice cooker. It's the only way I cook rice because I love that it's hands-off. If you don't have one, simply follow the package directions for stovetop preparation.
