This kielbasa sheet pan dinner is a family-friendly meal that comes together in under an hour using just one pan and simple ingredients.

If you’re anything like me, weeknights call for meals that are fast, flavorful, and fuss-free. Which is why over the years I’ve focused on one pot meals and one pan meals. They have become part of my meal rotation each week. My family loves kielbasa and my sheet pan kielbasa & potatoes dinner checks all the boxes! Tender roasted baby potatoes and crisp bell peppers get caramelized in the oven alongside juicy kielbasa links for a one-and-done meal that’s hearty enough to satisfy the whole family.
This recipe comes together on just one pan, which means minimal prep, minimal cleanup, and maximum comfort. Serve it with a side of mustard or your favorite dipping sauce, and you’ve got dinner on the table with almost zero stress and in under an hour.
Why this Recipe Works
All-in-One Dinner – Potatoes, peppers, onions, and kielbasa roast together on a single sheet pan — no extra pots or pans to wash, and all the flavors mingle while cooking.
Easy Prep Ahead Option -To save time, you can slice the peppers and onions up to 24 hours in advance and store everything in an airtight container in the refrigerator. When dinner time rolls around, simply toss onions and peppers with the diced potatoes on the baking sheet with a little olive oil, salt, and pepper, spread it on the pan, top with kielbasa links, and roast.
Hands-Off Cooking – After a quick 15 minutes of prep, the oven does the rest. While it cooks, you can help with homework, relax with your family, or finish other tasks.
Kid-Approved & Customizable – The mild sausage and roasted veggies are crowd-pleasers, and you can easily tailor the veggies or seasonings to match what you have on hand.
FAQs

Yes! Just cut sweet potatoes into similar-sized pieces so they cook evenly, and bump the roasting time by about 5–10 minutes.
Absolutely. This recipe is very flexible. Broccoli florets, sliced zucchini, carrots, green beans, or even Brussels sprouts all work well. For quicker-cooking vegetables like zucchini or broccoli, add them during the last 15–20 minutes of roasting so they don’t overcook.
Very delicate vegetables, like leafy greens, don’t hold up well in the oven for this length of time. If you’d like to add spinach or kale, stir it in during the last few minutes after roasting or serve it on the side.
Most kielbasa sold in stores is fully cooked, but we still roast it so it gets crispy and hot throughout. If using raw sausage, be sure it reaches 160°F internal temperature.
Refrigerate in an airtight container for up to 3–4 days. Reheat in a 350°F oven or on the stovetop until warmed through.
Recipe Tips and Tricks

Here are a few more tips and tricks when making my sheet pan kielbasa and peppers recipe.
- Add Extra Veggies – Throw in zucchini, cherry tomatoes, or mushrooms during the last 15 minutes of roasting.
- Spice It Up – Sprinkle smoked paprika or red pepper flakes over the potatoes, peppers, and onions before roasting for a little kick or sprinkle on cajun seasoning!
- Swap Sausage – Italian sausage works great here too — just check that it’s cooked through (you may need a few extra minutes).
