October can be one of the busiest months of the year for my family. I do it to myself, because I love going too as many fall festivals and Halloween activities as humanely possible. Last weekend, we drove an hour south of us to go to a ranch. This was our third year attending and it did not disappoint. Just knowing from past years how exhausted we are afterwards I knew I wanted to have dinner ready when we walked through the door. Hello old faithful pal, little miss slow cooker. I partnered with Smithfield® to share a fall recipe perfect for the long busy days like my family and I have been experiencing.

The day we were at the ranch my friends were asking about what everyone’s dinner plans were. When I informed then I had dinner waiting for us in the slow cooker they were shocked. Then proceed to pry more information from me. I think we often tend to forget that we can cook a complete meal in the slow cooker.

Ingredients

  • 1 1.25 lb. Smithfield® Steakhouse Seasoned Fresh Pork Tenderloin
  • 1 lb baby potatoes
  • 1 lb baby carrots
  • 1 onion quartered
  • 8 cloves garlic
  • 1 packaged sliced baby Bella mushrooms
  • ½ cup water + 2 tablespoon
  • 1 tablespoon fresh or dehydrated parsley minced
  • 1 tablespoon cornstarch

Instructions

  • Place the baby potatoes, carrots, onion, garlic cloves, and mushrooms in the slow cooker. Mix together then add in the Smithfield® Steakhouse Seasoned Fresh Pork Tenderloin. Bury it into the veggie mixture, and pour ½ cup of water in the slow cooker.
  • Cook on low for 8 hours (or high for 4).
  • Once the dinner is done sprinkle in fresh or dehydrated parsley. Season with salt and pepper if desired. Mix, then remove pork and veggies when it’s done.
  • Pour broth in sauce pan. Mix together 1 tablespoons cornstarch with 2 tablespoon of water. Place broth on high then mix in the cornstarch slurry. Mix until the sauce is thick. Season with a little salt to taste! Serve and enjoy.

    I’m excited to find this recipe because I’m just looking to find out how to do a pork tenderloin (or loin) in the crockpot. Any adjustments for doing 2 loins or tenderloins at a time? I would think not much. Thanks!

    Would canned mushrooms work? If so, when should I add them?

      Hi Amanda, I’ve never tested this recipe with canned mushrooms. This will definitely alter the flavor too as they tend to have additional sodium and the texture is different then cooked fresh mushrooms. If that’s all you have to work with I would add it towards the end just to heat them. I would be afraid of letting them cook all day long. Sorry I can’t be of more assistance.

    What would you suggest to do with a golden rotisserie flavor one ??? And how long ??

      Hi Caitlin, you can follow the same exact recipe–no need to change anything. The only difference will be the flavoring (not as robust as the steakhouse flavor). Good luck and enjoy!

    This was very good. I added some green beans to it. I had just a plain pork tenderloin on hand so I used pepper and seasoning salt on it.

    Katie, this recipe is amazing! I first made it with the Smithfield Steakhouse Tenderloin. Although tasty, we found that tenderloin to be a bit too peppery for our tastebuds. Next time I used the Smithfield Golden Rotisserie Tenderloin and kept everything else the same. Wonderfully tasty and perfect for us! Thank you for this wonderful recipe!

    Can you use frozen sliced mushrooms in place of fresh for this? Also, I am out of garlic, would garlic powder work?

    Can you cook it without the vegs. How do you cook it with the vegs in it

      Hi Leah, Yes, you can cook the pork tenderloin without the vegetables. Just follow the recipe as is with cooking times and don’t place the vegetables in the slow cooker. 😉 Hope that helps!

      Hi Amber, although I’ve never tested it I’m sure you could. I don’t know how wilted and soft the cabbage will be though. If you give it a try, please return back and share your experience with others, please! 😉 I would love to know the outcome!

    One question: At the end of the recipe, you say, “Pour broth in sauce pan.”
    Does that mean the broth from the slow cooker?

      Hi Jeannie, Yes, you’ll want to pour the broth into a sauce pan to bring it up to a boil so you can make the gravy! Hope that helps.
