Sauteed Zucchini w/ parmesan garlic cherry tomatoes

For some reason I always seem to forget about cherry tomatoes, and the fact that you can put them in a variety of dishes other than salad! I was dining out a few weeks back and received this as a side. I knew I wanted to re-create this dish to the best of my abilities since it was so delicious… I came close but not close enough. Either way it was still delish! 



Prep:  10 minutes
Total: 15 minutes 

Serves: 4


Ingredients:

  • 2 zucchini’s, halved, and sliced in moon shapes
  • 1 cup cherry tomatoes
  • 2 garlic cloves, minced
  • 2 tbsp grated parmesan 
  • 1 tbsp olive oil
  • salt & pepper to taste


Directions:

1. In a medium saute pan place olive oil and minced garlic. Cook on medium-high heat until garlic is fragrant. 


2. Add sliced zucchini and cherry tomatoes. Cook until tomatoes and zucchini are soft.

3. Sprinkle parmesan cheese on top of zucchini and cherry tomatoes, add salt and pepper to taste, and serve. Enjoy!
