Once again I’m sharing another iHop inspired pancake recipe. Last week, I treated my kids to the limited edition “cereal pancakes”. They loved them, and of course it inspired me to go home and make my very own St. Patrick’s Day Lucky Charms Pancakes.
Man, what a crazy month March has been. Who would have known at the beginning of the month that everything around us in the United States would be shutting down. Needless to say we would be experiencing a pandemic. If you’re like me you are trying to figure out all the things to do with our kiddos while we all need to keep our distances. That’s where these St. Patrick’s Day Lucky Charms Pancakes come in to play.
I earned major mom points in my almost 6-year olds eyes, since I actually allowed for a box of Lucky Charms in the house. Plus, I made a pretty awesome breakfast. Bonus… he ate not one but two large pancakes topped with the most delicious sweet milk cream, whipped cream, and of course… Lucky Charms cereal.

I’ve spent years trying to figure out the key to making the fluffiest buttermilk pancakes. Once I conquered it, I’ve stuck with making this recipe every single time. I recently started adding two additional egg whites into my batter along with one whole egg. I’m finding that by adding the extra egg they are a tad bit thicker yet super fluffy!
Here is the step-by-step process on how to make these magically delicious festive St. Patrick’s Day pancakes.
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Then add in the buttermilk, milk, eggs, and melted butter. Mix for 30 seconds until all ingredients are blended, scraping down the sides as needed.
Add the green food dye to the batter, and mix until incorporated. Spray cooking spray on a frying pan or griddle. Turn the stove on to medium heat.
Pour the batter onto the griddle, using about ¼ cup for each pancake (or less if you want silver dollar pancakes).
Cook until the pancake begins to start forming bubbles. Then flip and cook for 30-60 seconds longer. Remove from griddle and repeat until all the batter is used.
To make the sweet milk cream: In a bowl combined the milk with the powdered sugar. Mix until incorporated.
Top pancakes with sweet milk cream, whipped cream, and ¼ cup lucky charms cereal.

For the Green Buttermilk Pancakes
- 1 cup All-Purpose Flour
- 1 tablespoon White Granulated Sugar
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ¼ teaspoon Salt

- 3 tablespoons 2% Milk
- 1 Egg
