Once again I’m sharing another iHop inspired pancake recipe. Last week, I treated my kids to the limited edition “cereal pancakes”. They loved them, and of course it inspired me to go home and make my very own St. Patrick’s Day Lucky Charms Pancakes.

Man, what a crazy month March has been. Who would have known at the beginning of the month that everything around us in the United States would be shutting down. Needless to say we would be experiencing a pandemic. If you’re like me you are trying to figure out all the things to do with our kiddos while we all need to keep our distances. That’s where these St. Patrick’s Day Lucky Charms Pancakes come in to play.

I earned major mom points in my almost 6-year olds eyes, since I actually allowed for a box of Lucky Charms in the house. Plus, I made a pretty awesome breakfast. Bonus… he ate not one but two large pancakes topped with the most delicious sweet milk cream, whipped cream, and of course… Lucky Charms cereal.

Sweet and Fluffy – The buttermilk keeps these pancakes soft and fluffy, while the sweet milk cream adds just the right amount of indulgence!

Directions

I’ve spent years trying to figure out the key to making the fluffiest buttermilk pancakes. Once I conquered it, I’ve stuck with making this recipe every single time. I recently started adding two additional egg whites into my batter along with one whole egg. I’m finding that by adding the extra egg they are a tad bit thicker yet super fluffy!

Here is the step-by-step process on how to make these magically delicious festive St. Patrick’s Day pancakes.

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Then add in the  buttermilk, milk, eggs, and melted butter. Mix for 30 seconds until all ingredients are blended, scraping down the sides as needed.

Add the green food dye to the batter, and mix until incorporated. Spray cooking spray on a frying pan or griddle. Turn the stove on to medium heat.

Pour the batter onto the griddle, using about ¼ cup for each pancake (or less if you want silver dollar pancakes).

Cook until the pancake begins to start forming bubbles. Then flip and cook for 30-60 seconds longer. Remove from griddle and repeat until all the batter is used.

To make the sweet milk cream: In a bowl combined the milk with the powdered sugar. Mix until incorporated.

FAQs

Can I make these pancakes without buttermilk?

Yes! If you don’t have buttermilk, make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.

Can I make these pancakes ahead of time?

Yes! Cook the pancakes as directed and store them in an airtight container in the fridge for up to 2 days. Reheat in the microwave or on a skillet.

Can I freeze leftover pancakes?

Absolutely! Let the pancakes cool completely, then place parchment paper between each one and store them in a freezer bag for up to 2 months. Reheat in the toaster or microwave.

Can I use a different cereal?

Of course! While Lucky Charms fit the St. Patrick’s Day theme, you can use Fruity Pebbles, Froot Loops, or any colorful cereal you like.

Recipe Tips & Tricks

Here are a few of my favorite tips and tricks when making St. Patrick’s Day pancakes.

  • Don’t Overmix the Batter – A few lumps are okay! Overmixing can make the pancakes tough instead of fluffy.
  • Use a Measuring Cup for Even Pancakes – Pour ¼ cup of batter per pancake for uniform sizes and even cooking.
  • Cook on Medium Heat – Too high, and the pancakes will brown too quickly without cooking through. Too low, and they may turn out dense.
  • Make It Extra Festive – Add a dollop of whipped cream and a sprinkle of green sprinkles for even more St. Paddy’s Day fun!
  • Serve Immediately – These pancakes taste best fresh off the griddle, topped with sweet milk cream and crunchy Lucky Charms.
  • Food Dye – You do not have to include the food dye if you don’t want the additional chemicals in your recipe (although fun to look at). If you are looking for a dye free green solution I suggestion using spinach purée or juice which is the most neutral-tasting and provides the best vibrant green color without chemicals. Matcha powder is another great choice if you enjoy a slight tea-like flavor.

Ingredients

For the Green Buttermilk Pancakes

  • 1 cup All-Purpose Flour
  • 1 tablespoon White Granulated Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 cup Buttermilk
  • 3 tablespoons 2% Milk
  • 1 Egg
  • 2 Egg Whites
  • 2 tablespoons Salted Butter melted and cooled
  • ¼ teaspoon Green Food Dye
  • 1 cup Whipped Cream divided
  • 1 cup Lucky Charms Cereal

For the Sweet Milk Cream

  • ⅓ cup 2% Milk
  • 1 cup Powdered Sugar
