Looking for a refreshing and delightful summer salad that can be ready in just 15 minutes? Dive into the goodness of Greek Cucumber Salad, a delightful blend of crisp cucumbers, juicy tomatoes, tangy red onions, creamy feta, aromatic dill, and briny kalamata olives that will transport your taste buds straight to the sunny shores of the Mediterranean.

This Greek cucumber salad is one of my favorite salads. I make this salad at least once a week. Sometimes not as glamorous with the kalamata olives and the feta. Sometimes its cucumber and tomato with the Greek all-purpose seasoning, olive oil, and a little fresh dill from the garden. I first blogged about my cucumber feta salad almost a decade ago. This was before I liked feta. Over the past decade, I’ve played with this recipe and its completely transformed into what I can now honestly call mine. I no longer use a processed salad dressing.

I have a Grilled Greek Pork Tenderloin that compliments this salad very well.

Ingredients

Ingredients on marble counter: olives, dill, oil, Greek Seasoning, cucumber, tomato, red onion, and feta.
  • Tomatoes – For this recipe I like to use grape tomatoes that I’ve sliced in half. But you can also use plum tomatoes that are chopped into bite-size pieces.
  • Cucumbers – One European style cucumber is all you need. You will want to make sure to remove most of the seeds so that the seeds don’t overwhelm the seeds.
  • Olives – I like to use Kalamata olives that come pitted already from the store.
  • Onion – I like to use red onion as it’s not as pungent as white onion.
  • Dill – Fresh dill works best for this recipe.
  • Feta Cheese – Any type of feta works for this recipe.
  • Seasoning – I like to use Cavendar’s Greek Seasoning. It hits all the right flavor notes in one small container.
  • Oil – I use a nutty olive oil to give an additional layer of flavor to the salad dressing.

How to Seed a Cucumber

First, you want to scrape out the seeds from the cucumbers. To do this, you will want to slice the cucumbers in half (length-wise) then run a spoon down the middle removing most of the seeds and membranes.

How to Make Greek Cucumber Salad

  1. Grab a nice big bowl and toss in those colorful grape tomatoes, the sliced cucumber, the thinly sliced red onion, and don’t forget to sprinkle in the fresh dill – it adds such a fantastic flavor!
  2. Next, sprinkle the Greek seasoning on top of the mixed veggies and drizzle on the olive oil.
  3. Add the kalamata olives to the bowl. Mix well and let the flavors mingle and hang out in the fridge for about 30 minutes. It’s like a little flavor party in there! The longer it rests, the tastier it gets.
  4. Mix in the feta right before your about to serve the cucumber tomato feta salad.

Can I make this salad ahead of time?

You can however you risk the vegetables softening. This Greek cucumber tomato and feta salad is best consumed fresh. I’ll make it just before dinner, pop it in the refrigerator to cool, and then top it with feta right before dinner is served.

Can I substitute any ingredients in this recipe?

Absolutely! Feel free to personalize this salad according to your taste preferences or dietary restrictions. You can add bell peppers, sliced radishes, or even avocado. For a vegan version, omit the feta or replace it with a vegan alternative.

How can I store the leftovers?

If you have leftovers, store them in an airtight container in the refrigerator. This salad will stay fresh for up to two days. However, keep in mind that cucumbers release water as they sit, so the salad might become a bit watery.

What Greek Seasoning do you use?

I use Cavender’s Greek Seasoning. It’s the only all-purpose Greek seasoning I’ve ever used. You can find this in the spice aisle. I’m sure other brands will work fine, if you find another Greek seasoning spice blend at the grocery store.

Recipe Tips & Tricks

  • Marinating – I like to let the Greek seasoning marinate on the salad for a good 30 minutes. The salt from the seasoning helps break down the cucumbers and the flavor absorbs into it beautifully.
  • Colored Tomatoes – To make the salad even more visually appealing, use a mix of different colored tomatoes, like red, yellow, and orange.
  • Pickled Onions – For an extra burst of flavor, try marinating the sliced red onions in a mixture of red wine vinegar, sugar, and water for about 10 minutes before adding them to the salad.
  • Creamy Dressing – If you prefer a creamier dressing, whisk together some Greek yogurt with lemon juice and garlic, then drizzle it over the salad instead of the traditional olive oil and vinegar dressing.

Ingredients

  • 1 pint Grape Tomatoes halved

    You don’t expect from a Greek to tell you that she doesn’t like this salad do you? lol. I love it and eat it in several variations almost everyday especially summer that tomatoes and cucumbers are in season here!

    This is pretty much exactly what I had for lunch today! So delicious and so simple. I didn’t use onion, dill or olives though. But I love olives. I uses this amazing olive oil we got on our honeymoon in Napa and it was sooo good. 🙂

      Agree Liz! I plant fresh dill all the time and for some reason it is the one herb that doesn’t do that well for me. 🙁

      Christine–I agree! You can totally leave the feta out of his portion and just sprinkle feta on the individual bowls!

    I only use Cavender’s too, that stuff is awesome and I’ve probably used it for 20 years. Have you ever sprinkled it on cream cheese…yeah, it’s good.

    This is one of those happy summer salads with all the ingredients I love to eat!
