Elevate your next summer barbecue with my flavorful recipe for Greek Grilled Corn on the Cob in 20 minutes time! Fresh corn on the cob topped with a mixture of Greek seasoning, butter, and fresh dill all poured on top of grilled corn. Feta is crumbled on top to give a natural salty and creamy texture to the corn.
Nothing says summer like fresh corn on the cob. I love corn on the cob and try to incorporate it into as many meals as possible during the summer months. Most people will find that they always boil corn on the stove top. Many years ago, I started branching out and grilling corn.
I love how the flavors of the sweet corn are brought out by the grill. I love to create different flavor combinations as well when I’m serving corn on the cob. Not just for my family, but also for my friends who might come over and have dinner with us.
For some reason though, I got this wild idea of mixing the butter with Greek seasoning, sprinkling fresh dill and feta on top… Kind of like Mexican Street corn which I love ordering at restaurants, but for some odd reason have never made it at home. So I present you with it’s cousin… Greek Grilled corn on the cob!
In this post you will learn the following information.
Ingredients
- Corn on the Cob – I love to use fresh corn on the cob when available.
- Greek Seasoning – I use Cavender’s All Purpose Greek Seasoning.
- Butter – salted or non-salted that is all up to you. But you will definitely need butter as the base to your mix. *You could use a dairy free butter, but I will preface I have not tested any of the plant based butters on this recipe.
- Dill – I prefer to use fresh dill but dried dill works too.
- Feta– Plain crumbled feta is what I use and what I always keep on hand. I like to make sure the chunks aren’t too big. I find the bigger chunk the more possibilities for the feta to fall off. I try to use a spoon and dig down to the bottom of the container to get the smallest pieces as possible to sprinkle on the corn.
Directions
Preheat a gas grill to high heat.
While the grill is preheating melt butter and mix with 1 teaspoon fresh dill and 2 teaspoons Greek seasoning.
Using a silicone brush, generously begin to spread the butter over each ear of corn. *You should use about ⅓ the mixture.
Lower the heat on the grill to low. Place the corn on the grill and let it cook for about 10 minutes on medium-high heat (turning every few minutes).
Halfway through the cooking process, using a silicone brush, spread butter mixture over the top of the corn.
Remove corn from the grill and pour remaining butter over the corn. Sprinkle with feta cheese and the remaining fresh dill. Serve immediately and enjoy.
FAQS
Yes! Make sure to only put the corn on the cob on the grill for the time indicated for this recipe. Flipping often will prevent from sides of the corn to burn.
You will notice that the corn will be a brighter yellow (or white). I always like to have a few kernels toasted as I know that is also an indicator the corn is done. As long as you cook the corn on the grill for 10-15 minutes your corn will be done.
Corn on the cob can be grilled with the husk on. If you decide to do this method, you will want to soak the corn for 10-15 minutes prior to grilling. This will prevent the husk from burning.
Tips & Tricks
Here are a few of my favorite tips and tricks to help you execute this recipe perfectly!
- Butter Sauce – Make this prior to putting corn on the grill. I will preheat grill, then make the butter mixture.
- Oil Grill – whenever I’m grilling I always spray a little non-stick cooking spray on the grill grates. This helps prevent food from sticking, and makes cleanup a breeze!
- Place corn vertical – this will prevent the corn from rolling around on the grill grates.
- Turn often – To prevent burning you will want to turn the corn every few minutes.
- Baste Corn – I like to do a light coat of butter before I grill, another coat while I grill, and then use the remaining butter to top the corn off right before serving!
- Silicone Brush – I prefer to use a silicone basting brush over one that has hair bristles. The hair tends to fall into the food over time.
- Fresh Dill – Fresh dill works best for this recipe; however, if you don’t have it on hand you can use the dried version!
