Have you ever tried overnight oats? I’ll be honest I hadn’t until last year, and while I’m being honest, I was never a fan of oatmeal until I gave birth to my son two and a half years ago. I learned to like oatmeal because I was breastfeeding and the oats were a great natural milk booster. If you’ve ever breastfed a baby you know that supply in king! You’ll do anything to boost your supply and that’s how I learned to like oatmeal. Then, I had friends from my local boot camp group who encouraged me to try overnight oats. So I did and holy cow do I like them! I love how easy they are to assemble and the sky is the limit as far as the flavors go.
It dawned on me this summer that I had yet to share any overnight oat recipes on the blog. That’s about to change as of today! Since Fall has officially arrived in most of the United States I figured I should share my recipe for Apple Pie Overnight Oats. I’ve shared my recipe for my caramel apple oatmeal before, which is more like a dessert than breakfast! This is a slightly healthier version using Bob’s Red Mill steel cut oats and Bob’s Red Mill Organic Coconut Sugar. You might be wondering what the difference is between white granulated sugar and coconut sugar. The first thing is that a teaspoon of the coconut sugar has 5 calories less than regular refined white sugar. Might not sound like a lot but every little bit helps. Coconut sugar is an alternative sweetener made from the nectar of coconut palm tree blossoms and it has a mellow caramel flavor.
So let’s talk about how to put together the Apple Pie Overnight Oats. I use a 16 ounce wide-mouth mason jar, add in Bob’s Red Mill Steel Cut Oats, Bob’s Red Mill Coconut Sugar, apple pie spice, and ground flaxseed. I like to mix all the dry ingredients together then pour the milk on top, followed by a dollop of homemade applesauce and then top with Stonyfield Organic Whole Milk Vanilla Bean Greek yogurt. I like to use the vanilla bean because it’s slightly sweeter, a little less tangier than traditional plain Greek yogurt, and adds to the flavor of the overnight oats.

Apple Pie Overnight Oats
Ingredients
- ½ cup Bob’s Red Mill Steel Cut Oats
- 1 teaspoon Bob’s Red Mill Coconut Sugar
- ¼ teaspoon Apple Pie Spice
- 1 tablespoon Ground Flaxseed
- 1 cup 2% Organic Milk
- 2 tablespoons homemade applesauce
- ½ cup Stonyfield Organic whole milk vanilla Greek yogurt
- 2 tablespoons honeycrisp apple chopped
- Cinnamon for garnish
Instructions
- In a 16 ounce wide mouth mason jar, layer the Bob’s Red Mill Steel Cut Oats, Bob’s Red Mill Coconut Sugar, Apple Pie Spice, and ground flaxseed. Mix well then pour the milk on top. Add in the homemade applesauce and top with a ½ cup Stonyfield Whole Milk Vanilla Greek Yogurt. Seal with lid and refrigerate for at least 8 hours.
- The next morning, when your ready to eat, mix the oats well (if they seem to dry add in additional milk or yogurt to desired consistency) and top with freshly chopped honeycrisp apple and sprinkle with ground cinnamon. Enjoy!

Hi Ann, thanks–me too! I typically use rolled oats as well, but gave the steel cut oats a try and I like it. A little heartier than with rolled oats but still equally as delicious!
