Who says pizza night has to be ordinary? If you’re a fan of buffalo chicken wings, then this Buffalo Chicken Flatbread Pizza is about to become your new favorite! It’s a flavor-packed, satisfying meal that combines the bold, spicy kick of buffalo sauce with the comforting elements of a cheesy flatbread pizza. Whether you’re looking for a quick weeknight dinner, a crowd-pleasing party appetizer, or a game day snack, this recipe has got you covered.

Flatbreads in general make for an easy dinner or a spur of the moment appetizer. When I sent my husband to Costco a few weeks ago for a rotisserie chicken I knew I wanted to make chicken pot pie and my homemade chicken soup recipe. I didn’t think I would have any chicken left on the rotisserie. I can stretch a $5 rotisserie chicken from Costco like no one else. Easily 2-3 meals.

What makes this Buffalo Chicken Flatbread Pizza stand out is its simplicity and versatility. With just a few ingredients like cooked rotisserie chicken, whipped cream cheese, and sharp cheddar, you can whip up a meal that tastes like it took hours to prepare. The addition of green onions and celery brings a fresh crunch, while bleu cheese adds a creamy, tangy finish that perfectly complements the buffalo sauce. Trust me, once you try this pizza, it’ll become a staple in your recipe rotation!

Why this Recipe Works

It’s easy to serve, share, and eat, making it ideal for entertaining.

  • Ingredients

    • Flatbreads – I like to use thin flatbreads you can find in the deli area at the grocery store. Naan bread also works great for this recipe.
    • Chicken – cooked shredded, rotisserie chicken works best for this. However, if you have any type of leftover chicken or even chicken strips chopped up will work!
    • Green onions – Sliced green onions get mixed inside the chicken mixture and topped on top of the pizza.
    • Buffalo sauce – Grab a bottle of your favorite buffalo sauce.
    • Celery stalk – One celery stalk minced gives a nice crunch. I mix this into the chicken mixture.
    • Whipped cream cheese – This gives a nice creamy touch and almost a white pizza feel.
    • Shredded cheddar cheese – This will be the base cheese for your pizza. I like a sharp cheddar for this recipe.
    • Bleu cheese – A few tablespoons of crumbles sprinkled throughout the flatbreads is all you need.
    • Plain Greek Yogurt – I like the tanginess of the Greek yogurt that I mix with buffalo sauce. Plain yogurt or even sour cream will work, too.

    Directions

    First, preheat oven to 400 degrees Fahrenheit.

    Pre-bake flatbreads for 2 minutes. While the flatbreads are baking combine the shredded chicken, 1 tablespoon diced green onions, ¼ cup buffalo sauce and minced celery stalk. Mix until well combined.

    Remove the flatbreads from the oven, divide the whipped cream cheese among the four flatbreads and smear on each flatbread. Divide the buffalo chicken mixture, shredded cheddar cheese, and bleu cheese among the four flatbreads evenly. Bake the flatbreads for 5 minutes or until golden brown in color.

    While the flatbreads are baking combine the Plain Greek Yogurt with 1 tablespoon of buffalo sauce. Set to the side once combined.

    Remove the flatbreads from the oven, cut the flatbreads, sprinkle the remaining green onions on top of the flatbread. Place the Greek yogurt buffalo sauce in a baggy, cut the tip off one of the corners of the baggy and pipe the sauce on top of the flatbread. Serve immediately.

    Recipe FAQs

    Can I use a different type of flatbread?

    Yes, sometimes when I don’t have flatbreads I use naan bread or pita. Just make sure it’s sturdy enough to hold the toppings.

    Can I make this pizza ahead of time?

    You can prepare the toppings and assemble the pizza ahead of time, then bake it when you’re ready to serve. However, for the best texture, I recommend baking right before serving.

    Is there a substitute for bleu cheese?

    If you’re not a fan of bleu cheese, you can substitute it with feta or leave it out altogether. The pizza will still be delicious without it!

    Tips and Tricks

    Here are a few of my favorite tips and tricks when making buffalo chicken flatbreads.

    • Preheat Your Flatbread – For a crispier base, pre-bake your flatbreads for 3-5 minutes before adding the toppings. This helps prevent them from becoming soggy. Don’t skip this step as it’s actually very important!
    • Yogurt – If you don’t have plain yogurt on hand you can use sour cream with a splash of water to thin out the sour cream allowing it to spread easily.
    • Protein – You can substitute the chicken for cooked shrimp or use your favorite vegan protein to replicate the same great flavors.
    • Adjust the Spice – If you prefer a milder flavor, reduce the amount of buffalo sauce or mix it with a bit more Greek yogurt. For extra spice, add a drizzle of hot sauce on top before serving.
    • Don’t Skip the Fresh Veggies – The green onions and celery add a nice crunch and fresh flavor to the pizza. If you’re not a fan of celery, you can swap it for chopped bell peppers or even spinach for a different twist.

      Where do you purchase the flatbreads that you use? I, too, am OBSESSED with flatbreads! I would love to make them at home but always thought I needed to make my own!!

        Hi Staci–I purchase them at my local grocery store (Publix). They are made by the FlatOut company. Good luck finding them!

        They came out with them last year. I just started seeing them in my grocery store over the past few months! I also like the Archer Farms flatbread from Target!

      I am a flat bread fan too. It is such a medium for trying out all kinds of crazy and fun combos. Plus being quick. This version being a prime example.
