Potatoes and Cauliflower Mash is the perfect way to incorporate more vegetables in your mashed potatoes without anyone knowing that their are any in the dairy free/gluten free side dish.

Everyone loves potatoes, but this potatoes and cauliflower mash recipe is great if you’re looking to cut some calories out of your next meal. The cauliflower ingredient in this dish is what makes these mashed potatoes fluffier and lighter than traditional mashed potatoes, which (although delicious!) can tend to sit heavier and add more carbs. 

This olive oil mashed potatoes recipe is also the perfect side dish to any meal if you’re trying to sneak in some extra veggie servings for picky eaters! This recipe is gluten free and dairy free.

Ingredients

Recipe ingredients: red potatoes, cauliflower, parsley, seasonings, and oil
  • Red baby potatoes – cut into quarters for easier mashing.
  • Seasonings – You will need a combination of garlic powder, salt, and black pepper.
  • Oil – I love to use olive oil for this recipe. It adds an additional layer to the recipe.
  • Herbs – A mix of fresh parsley and thyme are perfect aromatics to spice up these potatoes.

In a large pot add quartered red baby potatoes and fill with water, three quarters of the pot full. Add 1 teaspoon of salt to the water. Bring to a boil and cook for 15 minutes. Then add cauliflower to the same pot and cook for an additional 10 minutes or until potatoes and cauliflower are fork tender.

Drain and place back in the pot. Add olive oil, chopped parsley, garlic powder, salt, and pepper.

Using a potato masher, mash until smooth. Taste to see if you prefer more salt and pepper. Add more if desired. Serve and enjoy!

Here are a few of the most frequently asked questions when making Mashed potatoes and cauliflower.

How do you thicken up cauliflower mashed potatoes?

To help thicken your mashed potatoes and cauliflower, you can add a cornstarch or flour slurry. To do so, put your potatoes mash back in the pot and slowly add and stir in the cornstarch or flour until you reach the consistency you want

Does mashed cauliflower taste like mashed potatoes?

This potatoes and cauliflower mash will have a slight different taste than traditional mashed potatoes, because of the added cauliflower ingredient! Slightly earthier in my opinion. The texture will be similar though.

Can I boil cauliflower with potatoes?

Yes! In this recipe I boil the potatoes first just because they take a bit longer, then add in the cauliflower. 

Is mashed cauliflower healthier than mashed potatoes?

Yes, these cauliflower mashed potatoes are less calories than traditional mashed potatoes, however exact nutritional calculations will vary based on your serving size and ingredients. Cauliflower itself is lower in carbohydrates and calories than potatoes, and has more nutrients. Try this Cauliflower leek puree for an alternative, healthier cauliflower side dish.

Here are my tips and tricks I have found helpful when making olive oil mashed potatoes.

  • Cooking Times May Vary – All stove tops cook differently. Cook this recipe like you would normally cook potatoes. If your stove top cooks faster than what was written above then adjust your cooking times.
  • Potatoes – You can choose to peel the potatoes if you prefer potatoes without skins.
  • Add more Cauliflower – For even lighter smoother potatoes you can add an additional 10 ounces of cauliflower to this recipe.
  • Herbs – You can add additional fresh herbs to this recipe like chives, thyme, or even dill.
  • Warm the Olive Oil – If you want an even flavorful mashed cauliflower add the olive oil to the hot pot for a few minutes before you add in the potatoes/cauliflower. This will warm the olive oil giving you a fuller richer olive oil taste.

    OK….I love this idea but am SO nervous! I tried making cauliflower mashed potatoes and hated them, and I just am nervous that I’d still be able to taste it even amongst the potatoes, but you think I’ll be ok? πŸ˜›
