Indulge in the tropical feeling with my easy recipe for Piña Colada Ice Cream Sundaes! This recipe should only take you ten minutes time to make, and for an added bonus, there are some health benefits too from the secret ingredient: Omega 3!

Unlike some of my other ice cream recipes, this one makes me feel like I’m out on a tropical vacation, swinging in a hammock by the beach. So, let’s make some Piña Colada Ice Cream and pretend we’re on the most relaxing beach!

Now, I know what you’re thinking, fish oil in my ice cream?? But I promise you that this one tastes so good. I even got my parents, who absolutely hate the taste of fish oil, to try it unknowingly in this recipe, and they loved it! So if you are trying to get your kids or other family members to take fish oil for the health benefits, then this Pina Colada Ice Cream recipe may be just what you need. 

Ingredients

Seriously Delicious™ Omega-3 Fish Oil Piña Colada being poured on top of sundae.

Ice Cream – I like to use vanilla ice cream but you can also use frozen yogurt to make a pina colada frozen yogurt sundae instead.

Seriously Delicious Omega-3 Fish Oil Piña Colada – Trust me, it works.

Pineapple – I prefer to use fresh pineapple, but if you can’t find any then you can use canned.

Sweetened Coconut Flakes – I like to lightly toast them to release some of the flavors.

Barlean’s Organic Flax·Chia·Coconut Seed Blend – If you can’t find this then you can buy the flax, chia, and coconut separately.

Macadamia Nuts – I like to crush them into smaller pieces to sprinkle over the ice cream.

Directions 

2 mini Piña Colada Frozen Yogurt Sundaes

Scoop the vanilla ice cream into four bowls, then pour over two tablespoons of the Pina Colada fish oil.

Next, divide the diced pineapple among the four bowls of ice cream. Top each bowl with some of the toasted coconut flakes and seed blend.

Lastly, add the macadamia nuts to the bowls of ice cream, and enjoy!

FAQs

Does Pina Colada Ice Cream contain alcohol?

No, there is no alcohol in this Pina Colada Ice Cream recipe, but feel free to add your favorite rum if you like!

What is the daily serving size for fish oil?

All you need is 250 – 500 mg of fish oil per day.

Can I use frozen yogurt instead of ice cream?

Yes, you can use a vanilla flavor and have a Pina Colada Frozen Yogurt!

  • Ice Cream – Any Ice Cream will do if you don’t like the flavor of vanilla. There is even Pina Colada flavored ice cream that you can try if you want the full flavor!
  • Toppings – Crunchy toppings like macadamia nuts and coconut flakes are key to enhance the texture of this recipe. Crush and toast the toppings to improve the flavor too!
  • Milkshake – Feel free to take this recipe up a notch and create a Piña colada milkshake by blending the ice cream, pina colada flavored fish oil, and pineapple. For an added bonus throw in some white or gold rum!

  • 1 Ice Cream Scoop

Ingredients

  • 4 cups Vanilla Ice Cream
  • ½ cup Seriously Delicious™ Omega-3 Fish Oil Piña Colada divided
  • ¼ cup fresh pineapple diced
  • ¼ cup sweetened coconut flakes toasted
  • 4 teaspoons Barlean's Organic Flax·Chia·Coconut Seed Blend
  • ¼ cup macadamia nuts divided

Instructions

  • Scoop 1 cup of ice cream in 4 separate bowls. Then top with 2 tablespoons Seriously Delicious™ Omega-3 Fish Oil Piña Colada over each bowl of ice cream.
  • Divide the freshly diced pineapple among bowls, then top each bowl with 1 tablespoon toasted coconut flakes, and 1 teaspoon Barlean's Organic Flax·Chia·Coconut Seed Blend. Lastly, divide the macadamia nuts between the bowls, and enjoy!
