My Grape Tomato & Ricotta Crostini is the perfect easy appetizer recipe. This recipe came about purely from pregnancy cravings and has stayed in my easy appetizer rotation ever since!

Back when I was pregnant with my first born I craved this appetizer–yet I had never even made it before. I had went food shopping after work, had the bag boy load all my groceries, and I even pulled out of the supermarket parking lot when it hit me to buy a baguette and make this Grape Tomato & Ricotta Crostini. Seriously. I was not dreaming this–this really happened to me while pregnant. So I circled back around the parking lot. Found a spot and marched right back into the grocery store to buy a baguette. I needed to use up the pint of grape tomatoes and ricotta cheese in my fridge and my rationale was to buy something else to use it up!

  • Baguette –
  • Grape Tomatoes
  • Garlic
  • Parsley
  • Olive Oil
  • Ricotta Cheese
  • Salt & Pepper

Directions

I whipped this ricotta toast appetizer together right after I got home from the grocery store!

  • In a medium bowl, combine halved grape tomatoes with olive oil, garlic, fresh parsley, and salt and pepper to taste. Mix well and set to the side.
  • Slice baguette in ¼-inch thick pieces. Toast until golden brown.
  • Spread ricotta on each baguette and top with grape tomatoes. Serve and enjoy!

FAQs

What is the difference between a crostini and bruschetta?

Bruschetta, comes from the Italian word “bruscare”. Which means “to roast over coals”. It’s typically toasted whole and is larger wide slices of a rustic Italian or sourdough type bread. Crostini are sliced and toasted from a smaller, round, finer-textured bread like a white or wheat bread skinny baguette.

How do you keep crostini from getting soggy?

To keep your crostini from getting soggy I’ll wait to top it until just before serving my friends and family. I make sure they are going ot immediately eat it verse waiting for hours.

What part of the meal is crostini typically served?

I always serve my crostini’s as an appetizer. This could be during a brunch or majority of the times the crostini is typically served just before dinner!

Tips & Tricks

Here are a few of my tips and tricks whenever I make my ricotta crostini recipe.

  • Tomatoes – You can use any type of tomato that you have on hand. I personally like to use grape tomatoes. Sometimes I’ll even use my Oven Roasted Grape Tomatoes recipe!
  • Bread Slicing – Ask the bakery to slice your baguette. That will trim off a few minutes of prep time. My bakery will slice free of charge!
  • Make Ahead – You can easily prepare the tomatoes ahead of time for even easier entertaining.

  • 1 pint grape tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1 tablespoon fresh parsley chopped

Instructions
