I’m starting to get the hang of this juggling two kids thing. I’ve learned that in order to get dinner on the table on time for dinner I need to start dinner around 4:00. That gives me a good hour of prepping and getting dinner in the oven before my husband is home and my toddler is hangry. But some days we all take late naps or I get tied up with dirty diapers and a fussy baby. So that’s where a quick one pan meal comes in to play! I’ve started experimenting with more one pan meals and I’m excited to share my Sheet Pan Greek Shrimp Dinner. It’s done from start to finish in under thirty minutes!

Directions
- Preheat oven to 450 degrees.
- Place the green beans, tomatoes, chopped garlic, olives, and shrimp in a large bowl. Drizzle olive oil and sprinkle with half the Cavender’s All Purpose Greek Seasoning and half the fresh dill (preferably the stems). Toss until well coated.
- Pour onto a baking sheet. Sprinkle with additional Greek seasoning and dried oregano. Bake for 20 minutes.
- Remove from the oven, sprinkle on feta and remaining dill. Serve immediately.

I love to serve this Mediterranean shrimp dinner over a bed of rice. My spinach and feta brown rice recipe is also a great alternative. You can also eat it by itself.
This dinner serves four adults when portioned with a starch like rice.

Here are my favorite tips and tricks whenever I make one-pan Mediterranean shrimp!
- Prep – You can prep the veggies ahead of time to save time making dinner go even quicker.
- Shrimp – I use frozen shrimp that are already peeled and deveined. I let them thaw out in the fridge.
- Save Time – I use green beans that are already trimmed and pre-washed (its another trick of mine).
- Greek Seasoning – I prefer Cavender’s All Purpose Greek Seasoning. I love this seasoning. I use it on everything. I’ve used it on my Grilled Greek Pork Tenderloin recipe and my cucumber tomato and feta salad. It’s one of my favorite seasonings!

- 1 tablespoon olive oil
- 2 teaspoons Cavender’s All Purpose Greek Seasoning divided
